Impossible pie?

Sorry for starting a new thread. I have been through the index collection and can't seem to find Aussies recipe for impossible pie. Can anyone either let me have the recipe or tell me where to find it please?

    Sorry I couldn't find a link but luckily I had a copy saved in my recipe folder:
    Impossible Pie
    1 cup sugar
    1/2 cup plain flour
    1/4 teaspoon baking powder pinch of salt
    2 tablespoons melted butter 2 eggs
    1 cup milk 1 cup coconut
    1/2 teaspoon vanilla
    Mix sugar with flour, baking powder & salt. Add melted butter. Add 2 well beaten eggs and milk. Mix in coconut & vanilla. Pour into greased pie plate and cook in moderate oven for 30 - 35 mins.
    NB: The reason it's called Impossible Pie is that when it's cooking it makes it's own pastry layer, it's own egg custard layer & the coconut rises to the top making a topping layer. How clever is that.

    Impossible quiche
    1 1/4 cups milk
    1/2 cup SR flour
    3 eggs
    1 cup grated cheese
    chopped bacon or ham
    any grated veg you have - carrot, zucchini,chopped mushrooms,etc
    1 onion chopped
    1/2 can of drained corn niblets.
    Mix all together and bake in moderate oven 3/4 hour or until brown on top.
    I put anything or as little in this depending on what I've got in the fridge. Makes it's own pastry.

    Chicken & Corn Impossible Pie
    2 cups milk
    125g creamed corn
    4 eggs
    90g melted butter
    1/2 cup plain flour
    1 cup grated cheese
    1 cup cooked chicken
    1 tablespoon chopped parsley
    1 tablespoon snipped chives
    Preheat oven to moderate, 180 degrees. Lightly grease a deep pie plate.
    In a large jug, whisk together milk, eggs & butter. Season to taste.
    Sift flour into a large bowl. Make a well in the centre, gradually whisk in milk mixture.
    Mix in half the cheese and all the chicken, corn, parsley & chives. Spoon mixture into prepared plate.
    Sprinkle with remaining cheese. Bake for 45 -50 minutes until firm. Serve in wedges. Accompany with salad.

    Cheeseburger impossible pie
    1lb lean minced beef
    1/3 cup flour
    1 chopped onion
    2 chopped cloves garlic
    1 pepper ( I used a green one but what ever tickles your fancy!)
    pinch salt
    grind of pepper
    1 1/2 cup milk
    3 eggs
    generous pinch mixed herbs
    1 cup cheddar cheese ( I used basics cheese and think slightly less of this would be better as it's ended up quite soft)
    parmesan cheese ( I used a good shake of ready grated hard Italian cheese that I bought in a tub in Sainsburys)
    fry mince onion peppers and garlic until mince is browned
    drain well in a sieve and allow to stand
    grease a pie dish
    whisk together flour and milk then add eggs
    stir in cheese
    stir in mince mixture
    pour into greased pie dish and bake at 170oc or until set

    ooh that sounds excellent.. is the first recipe a dessert rather than a savoury? .. judging by the sugar...

    And how many piggy portions would that create?

    I tried this for tea tonight, and while it was nice well the eggy part was it didn't really make it's own pastry - more a thin batter that stuck fast to the dish! (still soaking now to try and shift it)

    I did notice there wasn't any butter in the recipe - and maybe I should have greased the dish first... I don't know, but I wont be making it again.

    May give the sweet pie ago, but i can't see you getting any of them out in nice wedges :(

    Anyone have pictures to give me hope?

    HariboUK I usually spray the quiche dish with some oil spray or grease lightly with butter. You have to grease the dish for the dessert pie as well. It does cut into slices usually but it's not really like a pastry on the bottom. More like a firm outer layer.

    I've never tried the cheeseburger one so can't offer an opinion. Nor have I have substituted splenda for sugar. Try it and tell us. :laugh:

  • So far I've made the Impossible Pie with the Coconut in it and it was lovely, we all had it for Pudding one night last week and there was a slice left which I had cold the next day with a cuppa and it was just as yummy cold.;)

    Planning to try the Cheeseburger Impossible Pie tomorrow night, will let you know how it goes.:cool:

  • Wow they sound interesting, we don't like coconut, is there something else that can be used instead? I assume it needs to be light to float to the top? Can't think what else would work, maybe flaked almonds? What do you think?
