Thanks for the tip Tinkerbell. I'll try the oopsies instead of the flaxbread. Are the oopsies Induction friendly and which recipe do you use? I've got a posh do on Friday night and my dress is slightly a tight fit at the moment. I hope I don't put on another 2lbs this week or I'll never get in the dress. Is there anything else I can do this week (apart from the obvious exercise) that will turn the pin on the scales in the right direction? I've got an 80 hour week ahead of me this week so struggling to find time to exercise. I made a very nice liver, onions, leek and tomato messthe other week and froze 2 portions as you don't want to overdo the liver cos of vit A. Have had it with broccoli and cauli and it was very tasty. It's a well rounded meal and good for a change.
1 portion a week is deemed ok, my portions are just less than the 600ml take away type containers.
I love liver and most offal. Not to be sneezed at as is very cheap and nutritious
Don't think cheese would be nice with liver, it's got too much a strong flavour of it's own. Needs clean veg like broc/cauli to showcase it properli. Maybe non-cheesy leeks?

I am now going to attempt to make oopsies.
Trouble with doing LC just for myself is i cant be bothered to cook anything that takes much effort, its usually quick grill or fry or salad stuff which is why i probably get bored.0 -
Does anyone have any ideas for a gravy substitute or I fear for Sunday lunch, or is that pushing low carb too far
This is my recipe;
100ml double cream
1oz cream cheese
some grated cheese
Heat and mix together;)
I've also used the same sort of mix to make fish or chicken pie.... just throw in the chicken or fish and some veg (leek, mushrooms etc). Once cooked, put in dish, cover with mashed cauli and stick in oven. Grated cheese on top if you want:D . I'm a student nurse out with the district nurses at the moment. That involves doing a 37 hour week. I've also got a 5000 word dissertation going on as well which takes up about 6 hours of my time a day. Happy days0

But the egg is a versatile oval! There's the regular boiled, fried, scrambled, omlette. :jThen you get pancakes! :j Bakewell tart! :jEgg custard!:j Oopsies!:j Boiled egg chopped up and mixed with cream cheese, mayo and smoked salmon trimmings!:j (my excellent lunch)
Can't personally ever get tired of eggs, good to know that they've recently been rehabilitated re cholesterol too

You'll need some serious fuel then, to keep all that going on. I can recommend as a snack treat the bakewell tart if you do almond flavours. The slices are firm enough to stand alone and be easily tranported when wrapped in greaseproof, and at 6g carb per 1/6th slice are doable if this is worked in to your daily goals. Very pleasant with a little double cream for when you need a break and a treat for all the hard work you are putting in. :j
I make mine and keep it on the stove top (under a tent of cooling rack and kitchen towel to keep off dust and cats:D) for 3-4 days without any deterioration in taste or quality.
Also, boiled eggs are a great resource as are so easily transported. (I boil a few at once, they keep for a week at least at room temp. probly longer in the fridge) One of them and a sml pack of pork scratchings / sausage / cooked bacon or ham pieces makes a great mobile meal
Best of luck with the 80hr week! A little preparation foodwise will pay dividends when you get the urge to EAT NOW cos u've just realised you are ravenous

Badger lady, how do you make your jelly as i'm enjoying mine but flavours are limited in shop bought.
Oh, it's dead easy - you can use any cool liquid, so I've used fruit tea but you could use sugarfree squash:
- Mix up one pint of your cold liquid (if making tea, boil first and then leave to cool)
- Add one sachet of Vege-Gel (from the baking aisle at Tesco) and whisk until dissolved
- Over a hob, bring the liquid to boiling point
- Pour into molds / bowls etc and immediately refridgerate. Personally, I put the molds in the freezer beforehand just to ensure instant cooling.
An hour later, the jelly is solid and ready to eatYou can experiment with any flavours you like, and any shapes! And even vodka jellies would be low-carb, though of course alcoholic.
