bread and butter pudding including banana and chocolate versions (merged)

How do i make bread and butter pudding? I really really fancy it havent had it for years. I only have a lasange dish can i make it in that? Also I'm on weightwatchers so is there a low fat way to do it?

  • Here we go! Get about 10 slices of bread and lightly butter them with whatever you normally use. Make sandwiches out of them and cut them in nice triangles
    I leave the crusts on. Now arrange them however you wish into your greased lasagne dish. Sprinkle over some sultanas and a teaspoon of nutmeg or mixed spice if you wish. Then add some granulated sweetener or sugar. I never measure it-just about 4 desrtspoons at a guess-same with the sultanas. If you use sultanas as well, it wll be sweeter. Now beat 3 eggs and add about 3/4 pint of milk together.Pour over the bread and let it all soak in for about 5 mins. Cook on gas 4 or 350f/180c for about 45 mins or until the "custard" is well set and the bread is golden.
    I use semi-skimmed milk. skimmed would spoil it I think-too watery.

  • A nice addition is to spread the bread & butter with some marmalade as well.

    Or soak the fruit in some rum or similar first.

    Or use an alternative to the bread such as teacakes.

    Or use fresh fruit such as raspberries or tinned pineapple
    .

    this is virtually the same recipe as mine but ileave mine to soak for a bit longer. I agree that a lower fat one probably wont be as nice so just have a bit less of the nice fattening one .Enjoy!

  • My mum's recipe - for 4 people
    Grease large ovenproof dish. Either 4 slices buttered bread + 2 oz. mixed dried fruit OR 4 slices bread spread with mincemeat - cut bread into triangles & layer in dish. Beat together 1 oz. sugar & 2 eggs, add 1 pint milk & pour over bread - should only half fill dish. Leave to soak for at least 1/2 hour. Bake at gas mark 4 for about an hour.
    Enjoy - whichever recipe you use!

    These sound great - I have half a loaf at home, but am going away for the weekend, so might be the perfect thing to make on Monday when I'm back to use up the bread :D

    You could spread the slices of bread with nutella for a nice chocolatey taste. :)

  • I don't bother now with spreading butter/margarine on the bread - I add a little olive oil/grapeseed oil into the milk/egg mixture and pour it over the bread, letting it soak for quite some time. It should work out to be lower fat?

    Using sliced banana in addition to sultanas makes a nice variation.
