What can I do with raspberries...

..that will taste nice and won't take up loads of time and that I can't get wrong?

A lot of asks there I know. I bought some raspberries today as I was attempting to make some muffins. There is still half a pack left though and the best before date is tomorrow. They only did them in one size at Sainsburys and that is my closest supermarket so I just got them. They were half price but I still think they were expensive but this is probably cos I don't normally buy any fruit with the word 'berry' in it, lol.

I don't really want to have to get a whole loads of ingredients either as there isn't much in at the moment.

Can they be frozen for use later on? Maybe when I try the recipe again, who knows?!

Grateful for any ideas.

  • Raspberries freeze very well, just spread them on a tray and they will be fine, if you are using them for baking later I would defrost them first

    Should I wash them before freezing so I can use them straightaway?

    If you don't have any yoghurt to make it with, then simply use milk - delicious! :)

    I read somewhere that you shouldn't wash raspberries :confused:

    OK, one of the in-desserts at the minute is made from raspberries, cream (or creme fresh) and broken meringues - if you are feeling particularly fancy you could try throwing in a splash of something like Sambuka (sp?). Simply mix them together and serve ... very cheap and extremely tasty.

    Actually if you buy the berries frozen they advice NOt to thaw them first. They get softer and the juice runs out if you do. So juts like blueberries, mix them frozen in your batter for best results.

    Also you can blitz them and make a divine raspberry coulis to go on your yogurt/ice cream
    Or just scatter them on your bearkfats cereal.
    Sell by date is rather meaningless on soft(and other) fruit... they are either in good shape (not bruised and obviously not mouldy) or they are looking tired and need eating.

    Whip some cream, and toast some porridge oats with brown sugar.

    Use a wine glass, put a layer of the oat mixture in the bottom,, mix in some of the raspberries with the cream and pile this on top of the oat mixture, top with a single raspberry and sprinkle with a little more brown sugar (demerera) delicious. Eat with a teaspoon or if they are tall wine glasses a long handled icecream sundae spoon.

    You can if you are feeling expansive whisk a couple of tablespoons of either whisky or brandy into the cream...........

    Ivan Opinion - is your recipe called "Eton Mess"? and tootles - "Crowdie"? Made me feel quite hungry!!!!!!!!!!!

    It is a scottish recipie but called cranachan......... you can also make a trifle with frozen rasps, just put the rasps on top of a layer of jam swiss roll, make up a raspberry jelly and pour on top, the frozen rasps will help the jelly set, leave it until the jelly is set, make up some custard and the when the custard is cold whipped cream........

    I think raspberry crumble is lovely, especially with homemade custard.
