What can I do with chicken breast fillets...

  • I take a chicken breast, lay it between cling film and bash it flat. Then smooth over stuffing (that has already been made up) roll it up and wrap in foil and bake.

    Also, take a chicken breast, make a slit and stuff it with leeks that have been cooked and cooled. Serve with a cheese sauce...delish
  • Mix a tablespoon of honey, tablespoon of tomato puree, a shake of garlic granules and a good splosh of dark soy sauce (yes the measurements are technical terms!) until smooth. Coat the chicken fillets in them and allow to marinade if you have time. Grill for 10 - 15 mins on each side on medium - high (depends on your grill, mine is temperamental), the coating should caramelise slightly.

    I serve this with potato wedges (chopped and shaken up with a little oil and some cajun spice and baked for about 25 mins) and roast veg - peppers go really well.
  • I only realised this morning that the chicken breasts I bought on Sunday for tomorrow night's dinner has a use by date of 07.02! :eek: I hadn't frozen the pack of breasts because a) my freezer was full of potato based foods I'd made with my 3.5kgs of potato's which Adsa thought I'd like instead of the the 1.5kg's I'd ordered! and b) I keep my weeks meat in the fridge rather than freeze and take out to defrost during the week for meals!

    do you think they will still be ok to use or should I be on the safe side and just go and get some more?
  • I never eat chicken after it's date but if DH sees any a couple of days out of date in the fridge he cooks and eats it (by himself!). It hasn't happened for a while now but if I'm not vigilant I try to make sure I give the dogs a treat before he gets hold of it. Just in case you're wondering he hasn't been ill yet but personally I don't take the risk.

    No, I wouldn't eat it. Its an awful shame, but just not worth it.

    I'd be convinced whilst eating it that it was off anyway, and wouldn't settle for the next two days either :o

    I wouldn't risk it....sorry but if you are in doubt with meat I just would not go there!
