Hi everyone, Ive had three courgettes in my veg box this week and I dont have a clue what to do with them.
Whenever I have eaten them they have been soggy so it put me off them.
Can you freeze them?
Any ideas will be appreciated.

Add them to pasta sauces after the onions are cooked, give them 3-5 mins cooking then add the tomato sauce. Make sure they are sliced in 5mm slices.

I've added your thread to an earlier one that should help you to use your courgettes. They can be frozen but because of their high water content they tend to be a bit mushy once defrosted so best used in soups, casseroles etc.

I make a pasta sauce with courgettes...
Cut up courgettes, cook with a little butter until soft.
Add, about a table spoon of creme fraiche, per courgette to the pan, then blend the mixture.
Season to taste.
Mix with freshly cooked pasta. :drool:
If you make a large batch, it does freeze well
