    Strawberry Cheesecake

    100g ground almonds
    15g softened butter
    850g cream cheese
    4 eggs
    300ml double cream
    grated rind of 2 lemons
    Splenda, to taste
    142ml sour cream
    100g strawberries

    Preheat oven to 220/425/gas 7
    Mix almonds and butter together to make a dough. Press into base of a 20cm springform tin.
    Bake for 10-15 mins till crisp and set
    Reduce oven to 180/350/gas 4
    Beat cream cheese, whisk in eggs, double cream and lemon rind. Add Splenda to taste
    Pour on filling, bake for 1 hour
    Turn off oven, leave till cold
    Chill
    Spread sour cream on top, then sliced strawbs

    I guess that instead of putting strawberries on top, you could maybe play around with pureeing them and putting them into the mix itself, then add some more sliced ones on top (and forget the sour cream)?

    Charcoal aids digestion anyway;)

    I would use the yolks in scrambled egg too, if too much for one day, mix up and keep half for next day.

    I am soo making that tomorrow. bought strawberries yesterday, will have to hide them from the boys (or put a threatening note on them).

    HC that strawberry cheesecake recipe sounds lovely so will have to give it ago at somepoint. Am going to have omelette for lunch today so will use the yolks in that.

    HC chicken sounds lovely, will give it a try tomorrow. Lasagne for tonight.

    Love the look from La Senza too but dont think Im quite ready for it yet. I tend to stick to Kaftans or M&S but tucked away in my drawer I still have a gorgeous size 10 pale green silk and lace nightdress, its been there so long its probably moth eaten by now. Just couldnt bring myself to throw it away.

    Just had the most gorgeous lunch.

    Flattened a sirloin steak to within an inch of its life, so it filled the pan (and the plate) fried in butter threw in some sliced mushrooms, when cooked poured in double cream and swirled around, couldnt be bothered to cook veg but mushroom sauce was lovely, all brown and creamy.

    Had raspberries/jelly/cream to follow

    rasps need quite a bit of splenda as are very tart.

    The only cloud on the horizon is work at two..

    I know exactly how you feel maz; work is the one cloud always on my horizon:rolleyes:... it looks so nice out I wish I didn't have to be here :(

    The only problem is, I've been picking at it all day and it's all gone:o .


    By the way. enjoy your cross trainer mazzers. I bought one off ebay (for £10:D ) and I'm using it 3 x a week. At first, I could barely do 10 minutes. I'm now doing 30mins non stop and covering 10k. I've only been doing it for about a month so feel I've come on quite well (especially as I've never exercised in my life:rolleyes: ).
    If you think nobody cares whether you're alive or dead, try missing a couple of mortgage payments.:whistle:
