Muffins and cheese

Ok, the two aren't connected. :p

My first question is....

Having bought the ½ price silicon bake set from Argos (as posted by pavlovs_dog), I now have a little muffin tray-type thing. I thought I'd have a go at some. I was going to make a chocolate yoghurt cake, and instead of using a cake tin as normal, put some in the muffin tray and the rest in the loaf tin. I was going to add some chocolate chips to the muffin bit. Will it work? How long will they take to cook, and should I vary the temperature or leave it as it is? How much mixture should I put in the little holes?

Secondly, does anyone know where I can get some Wensleydale cheese - specifically the round waxed one with Wallace and Gromit on the front? I saw plenty before Christmas, and now all the Wensleydale seems to be in square blocks. I've tried Morrisons and ASDA.

    not sure why the cake mix wouldn't work in the muffin tin, but remember that they will cook quickly, so keep a very close eye on them - think 12 minutes rather than an hour! Most of the time trial and error is the only way to test if it really will work or not!

    As for the cheese, I have a feeling that it may have been a christmas special. Have you tried searching the internet? try this http://www.wensleydale.co.uk/wag.htm or this http://www.cheesesupply.com/product_info.php/products_id/369

    regarding the muffin tray. I think it rather depends on what you are trying to achieve.

    If you are just trying to get mini choc yog cakes, then that's fine but you won't get chocolate yoghurt muffins I'm afraid! (but no harm in trying I guess) The receipe for muffins is VERY different.

    I agree with r.mac that about 12 - 15 mins would probably be about the right time to cook for.

    The Wallace and Gromit cheese is made by the Wensleydale Creamery (IIRC I think they're the only ones who have the license to use W&G in adverts for Wensleydale) - I've just had a look on their website and you can get the W&G cheese from their webshop (scroll down a bit on the linked page) - hope this helps!

    I don't think you'll be able to find them in the shops at this time of year - my mum owns a deli and we can generally only get the waxed cheeses at Christmas, cause they're pretty expensive compared with 'normal' cheese.

    Silicon trays are extremely flexible especially when full of cake mix etc ;)

    I don't use them, but the advice is to place the silicone tray onto a baking sheet before filling.

    If you ever find yourself in Hawes or the Yorkshire Dales in general, a trip to the dairy is a must. Interesting to see how cheese is made!

    I do use them and would echo PP's advice, put them on a tray! Also, let the cakes cool in the mould, they turn out easily then :D

    I'm not paying that - I'm Yorkshire by gum! :D Looks like it'll have to be the square stuff. :(

    I have had dealings with the Wensleydale Creamery at Hawes before - me and my Welsh mate Jim were arguing (drunkenly) over which was the oldest, Caerphilly or Wensleydale. We found Caerphilly on the net at 1700-odd (IIRC), so I emailed the Wensleydale Creamery at about 2am. They got back the next day to tell me that Wensleydale had been made in the area by monks back in the 12th Century. I won by ages! :D

    Ahhh....I see. Well, I'd be quite happy with mini chocolate yoghurt cakes actually, so I might give it a go anyway! I bought some plain chocolate chips and some hazelnuts. I'll chuck a few in and see what happens.

    Not sure if I'll have time tonight now, as I spent ages in Morrisons. I did my weekly shop at ASDA for a change, and wanted to compare all the prices. Virtually nothing is cheaper in Morrisons, and the quality at ASDA is much better, so that's where I'll be going from now on. :money:

    Right, I haven't really go too much time, but would like to make 6 muffins to take to work tomorrow. Can someone point me at a 6 chocolate chip and hazelnut muffin recipe please? I'm inventing me tea, so haven't got time to look! Cheers! :D

    Chocolate muffins from 'Muffins' by Susan Reimer (with nut variation, nuts can be left out). The book says this makes 10-11 standard size muffins, so maybe half would do for 6?

    225g plain flour
    2 tsps baking powder (for SR flour, omit baking powder, leave bicarb the same)
    1/2 tsp bicarb
    1\2 tsp salt
    110-170g granulated sugar
    3-5 tbsp unsweetened cocoa powder
    60g chopped or ground hazlenuts
    1 egg
    240-260ml milk
    1 tsp vanilla essence
    90ml oil or melted butter
    Plain choc chips or nuts for topping (opt)

    Preheat oven to 375-400F, 190-200C, Gas 5-6

    In a large bowl, soft flour, baking powder, bicarb, salt, sugar and cocoa (and nuts).

    In another bowl, beat egg with a fork. Stir in milk and vanilla, the oil/butter.

    Pour all of wet ingredients into the dry. Stir until JUST combined, it'll be lumpy.

    Fill muffin cups 3/4 full, sprinkle tops. Bake for 20-25 mins, until tops spring back when gently pressed.
