Potato wedges:
Wash potatoes and cut into quarters. Cut the quarters diagonally in half. Rinse and dry. Put in a large oven dish and coat with a liberal amount of sunflower oil. Sprinkle cajun spices generously over the top. (Don't turn them or all the spices will come off into the oil.) Cook in oven at approx 180-200 degrees for around 30 minutes. (You'll need to check as it depends on how thick the slices are.) Have the oven hot before you put them in. I think this stops them sticking to the pan.
Serve with mayonnaise to dip.May all your dots fall silently to the ground.0 -
Bean burgers
Amazingly, these have become a bit of an 'I don't have time to faff around' meal as I'm surprised how quickly I can knock them together now. 10 minutes preperation to make about 8. I timed myself!
2 tins of beans, rinsed, drained and dried on a teatowel
1 chopped onion
Handful of sweetcorn
2 grated carrots
2 beaten eggs (one if large)
1 very thick slice of bread (or 2 if from a ready sliced loaf.)
clove of crushed garlic
chilli powder to taste
wholemeal flour to coat
If you have a food processor:
Take a chunk of bread (about half an inch thick) and blitz to bread crumbs
Change the blade to a grating one and put through a couple of carrots
Tip into a large mixing bowl
Empty the beans into the processor and blitz briefly. (I've used pinto and black eyed together, or kidney bean so far)
Add to the bowl
Add chopped onion, crushed garlic, some sweetcorn and some chilli powder and stir.
Add a couple of beaten eggs and mix.
Shape into burgers and place on a plate of wholemeal flour to coat.
Put in fridge for as long as you can to firm up a bit

I'm collecting lentil recipes so this is great, thanks Aussielle. Love the idea of sweet potato and it could be a mixed mash with ordinary potato too.... don't throw the string away. You always need string!

Couldn't decide if this was going to be Italian-style savoury or Chinesey, so did both.
1 sweet potato, peeled and cut into chunks (60p)
1 leek, sliced (20p)
5 garlic cloves, chopped or crushed (pennies)
1 large piece fresh ginger, chopped (pennies)
1.5 pints stock (pennies)
Arborio rice (as much as you want)
Handful frozen peas
Olive oil
Heat oven to 200 degrees. Put sweet potato, leek, garlic and ginger in roasting dish and drizzle with olive oil. Cook in oven for 20-25 minutes until the sweet potato is tender.
In the meantime, simmer the arborio rice in the stock until done, adding the frozen peas for the last 5 minutes.

Dry mustard powder
Cheese sauce granules
If doing in oven, heat oven to 180deg. Fry onions, mushrooms, leeks in oil, and transfer to casserole dish (or saucepan if doing on hob). Add soup, peas, 1 tsp dry mustard powder, a good sprinkle of cheese granules, and some milk (I did 4 fillets and 1/4 pint milk). Cook for 40 minutes if doing quorn from frozen, checking flavour as you go. Serve with new potatoes or rice.Nelly's other Mr. Hyde0 -

I added some leeks and cheese as mentioned earlier on in the thread and I also fried off the bacon bits before adding them too. Even my DD liked it ( apart from the bacon ) now that is really amazing
