    Dinner menu plan:

    Delia's roast tomato soup
    Roast peppers with couscous (using capers instead of anchovies.)
    Creamy broccoli pasta
    Curried squash soup
    Leek and potato soup
    Three bean chilli with rice
    trollburgers with chips

  • Made the lentil lasagne last night, and dad, bro and boyf had 2 bits each!!!!!! It was lush, really enjoyed it. Got the last 2 portions for lunch today :D

    Think we're going to have bean burgers for dinner tonight with wedges.

    I've been overdoing the pastries and my wasteline is taking the brunt of it! So I'm easing off on the dairy and no pastry this week. Lots of soup so I'll be making plenty of garlic croutons. I made herb croutons the other day - the same way as the garlic ones but used dried parsley and sunflower oil. They were lovely.

    I fancy making some sort of pudding with the plums though so any ideas would be gladly received!

    Oh, and I'll be adding most of the carrot to the squash soup.

    Croutons:

    Cut unsliced bead into chunks. I make mine about an inch or more square and half an inch thick. Put some oil on a baking sheet and place the bread on it, then turn them, to coat. Put in 200 degree oven till crispy. It takes approx 10 minutes.

    Add crushed garlic or dried herbs to the oil before adding the bread.

    The broccoli pasta sauce was delicious. I used creme freche as I didn't use the stuff I bought last week. However, it got a bit boring. I'll add mushrooms next time, or some cherry tomatoes at the end.

    DH said it would be sensational with some salmon. (Or bacon or pepperoni or chicken apparently!)

    Thanks GR. I was looking at the broccoli pasta recipe and thinking "Yummy, how can I sell it to DH and DS?". I have some leftover salmon, so there's tomorrow's evening meal sorted!

  • :drool: :drool: I made the veggie bean burgers last night, and oh my they were lush!!! We made enough to freeze two burgers and the two each we had were more than filling will a roll and side salad alone!! Yummy! :D

    This thread really is excellent, I've got so many great ideas, it's taking me a while to read through it though.

    Have I missed the recipe for sausage casserole? I'd be grateful if I could have it as I'm hopeless with quantities etc.
