    not too bad day today...

    bacon and egg
    smoked mackerel and salad
    1 cracker with butter
    spicy lamb mince - leek carrot pepper celery little onion chopped tommies - with salad
    slice of cheese with a smear of marmite

    being naughty now by having 2 glasses of red wine and a small dish of spicy nuts :(

    Good thinking. When you say corned beef stew, what do you mean?? :o
    I bought some corned beef today so think I'll make myself a hash tonight. Is that the same as a stew?! :confused:

    Did a foodie shop in M&S (only because they have a few deals on) & have bought 3 lots of fish (lemon sole, cod & salmon) as I'd really like to incorporate more fishy stuff into my diet. Might buy some prawns (if I can find any on offer) & make prawn mayo sometime too.


    Nah, it's a chunky soup thing.

    Fry onions in oil, mix in tbspn-ish flour (to thicken) add some beef stock, season, then throw in the veg, i use parsnip, swede, carrot and potato, when veg is cooked, stir through some frozen peas (they cook in the hot stock in 2 mins) and add cubed corned beef.. scoff :D
    Is so tasty, me and my middle son adore it, so hearty with some crusty bread when its cold outside.

    I also make dumplings to go with it, which is basically flour, suet and crumbled oxo, mixed together, then water added to make a dough, roll into small balls and boil in the stew with the veg before the peas are added, i take them out then and add later as required.

    Obviously not lc, but i spose you could use lc veg for a lc version.

    Edited as i just read Daisys post, i stir the c beef through lastly so it stays chunky, but melted-y, i usually let it cool then reheat with the dumplings in the micro.
    It really is lush and so cheap for a panfull

    Early doors here and found more snow overnight. Just a thin crisp coating so it may just melt during the day.

    Had breakfast, showered and ready to leave. Another meeting with lunch today so will avoid the carbs again. Bacon sandwich without the sandwich?

    Am losing the Christmas weight and now heading down the road of real weight loss again. Still no booze :j

    mazzers, think we would call your corned beef soup thing pernackelty (no idea if that's how you spell it!! :o) Tis nice though.

    Menu for today:
    B - 2 egg cheese & mushroom omelette
    L - 2 low-carb crispbreads with butter & cheese, garlic sausage, still no soup :(
    D - roast chick, cauli mash, green beans, cheesy leek/mush

    Will hopefully buy a butternut squash today & will roast that at the same time as the chicken so that I can make soup tomorrow.

    Bought a big tub of S&V peanuts in Netto yesterday (£2 instead of £2.50)so had a few last night - lush!!

    Hope everyone doing ok. Happy low-carb days :wave:

    Hello all. Still going strong here, am coming to the send of second week of IPD induction. I saw SS wanted to incorporate more fish into her diet so I thought I'd post the Jamie Oliver recipe we always do when we're at a loss; it's really tasty. Best done with oily fish like salmon.

    Take salmon fillets and place at one end of roasting tray. Par-boil some green beans, drain and put at other end of tray. Chop a few cherry toms adn sprinkle over green beans, and add some black olives. Mix up some olive oil, lemon juice, and pepper and sprinkle over the beans, then add six or seven anchovies (fewer if you find them very salty) on top of the beans mixture. As it cooks these break down over the beans and give them a great flavour. Then cook for 20 mins at 180C. scrummy!

    Today:
    B: bacon x 3
    L: egg mayo and ham salad
    D: lemony chicken with spinach

    Very misty this morning, the sun is coming through now though, lots of snow left lying around, feel very restless as not had a nice day out for ages :rolleyes:
    Roll on summer.

    Not had anything to eat yet, just coffee, read in the Harcombe book that as coffee raises blood sugar its best not to have a 'fatty meal' as it will get stored due to sugars being raised, makes sense i spose, so waiting a while for brekkie.

    Am loving the butternut squash soup, bet it'd be nice with parsnips.
    Sweet, Aldi or Lidl sometimes have them really cheap, they are too expensive in Tesco for my liking, the last one my son picked up, and paid over two quid :eek:

    Thanks sarah, it does sound lovely. I've never eaten anchovies :o but would give them a go in this dish as I'm trying to be a bit more adventurous with my food!! Variety is the spice of life, as they say!! :D Have bought watercress sauce to go with the salmon I bought yesterday but will give it a try soon & let you know what I think.

    How big was it?! I usually buy a smallish one from Tesco, costs about £1.20, that one must have been huge!! :rotfl:
    Don't have a Lidl nearby :( but have an Aldi that I've never been in :o Just remember years ago Aldi was thought of as a 'cheap & nasty' shop & not somewhere I would dream of going :o I'm not a snob, that was just the kind of shop it was. It's had an image overhaul in recent years & I will have to get my backside in there one of these days, especially if they sell cheap butternut squash!!

    They always have cheap fruit and veg and salad, the apples are awful but they have the sweetest crunchiest grapes ever, also, the jam is lush, conserve it is really but really cheap for the quality, it's a really lovely clean shop, i know what you mean about cheap nasty shops though, we used to have a Kwiksave and it was minging.

    Aldi also has things like avacados and aubergines which are cheaper than anywhere else, not a huge selection of everything but all the basics.

    Oh and yes, the squash was huge, thats my daft son for you!
