    Morning.

    Had breakfast and oil and going to head out into the dark wet day. Need to pick up a few bits in town but not food!

    Slept well last night as I closed the shutters and the street lights didn't shine in. Even the top of the blooming Civic Centre has purple lights on. When the City put up new lights round their car park a few years ago one of them shone straight into our bedroom - strong powerful things they are too. Called the head caretaker (not the title but I forget it) and he came round to check it out, agreed it was really intrusive and got his blokes to move it! Mind you, the City have now installed new street lights which are fab and only shine light down and not all around.

    Lunch -could be some luscious BNS soup with gammon in? :j
    Evening meal - pork steak with stir fried cabbage and broccoli
    Loads of green tea and water - I can tell that I've lost weight but only got 4 full weeks to lose 6 stone :rotfl::rotfl: not gonig to manage that target but a few more pounds would be great.

    Hope everyone is OK and keeping to LC.

    No shouting this morning, please, as I have a headache :o Proof that when I'm lcing, I cannae take my drink!! :rotfl: Only had 4 glasses of red wine but I was steamin'!! Think I should follow Gers' example & give up the booze for a while.

    HanSpan, glad you're feeling better about what happened, think the chocolate buns will help :D

    Gers, what stock do you use in your soup?? Just thinking, if you like gammon in your soup, have you ever used a gammon hock to make stock?? I do that sometimes, just for the flavour though, because I don't like meaty bits in soup.

    Menu for today:
    B - piggies in blankets (number to be decided, but there's 12 in the oven ;))
    L - 2 low-carb crispbreads with butter & cheese, garlic sausage, HM soup
    D - coriander & lime chicken, cauli mash, green beans, garlic mushrooms

    The cod was gorgeous last night, will definitely be doing that again & so easy to prepare. It went very nicely with the cheesy leeks on top as well.

    Depends what's around. If I have the stock from boiling the gammon I use that, otherwise it's usually Marigold vegetable stock powder or the Knorr jelly stock actually doesn't matter too much to me, apart from not using beef stick. Chicken is good too.

    What a frightening experience HanSpan. I was in Kings Cross last year to catch a train up to Leicester & they'd closed the line. When I asked what had happened the guard said an overhead cable had come down & managed to wrap itself round a train!! It sounds like it might not be as rare an occurrence as you'd think.

    Things are going very well food wise & I'm getting plenty of exercise but I'm having a glass or 2 of wine most evenings. Can't seem to get out of the habit. It's just how I relax after a hard day at work. I think for now, I'll just be grateful that I'm sicking to 2 out of 3 good habits & not beat myself up. I could change to carb free vodka or bacardi of course but once I start on that. :eek:

    I've lost about 4 lbs since the New Year but I'm most pleased that I've lost 1/2" from my waist & 1" from my belly. My trousers fit much better & I feel in control (apart from the wine.) :o
  • Gers, do you buy a raw gammon joint?? I love gammon but usually just buy the slices, now I'm wondering whether to buy a joint?? Is it more economical to do that?? I suppose I would have the cooked meat as part of a meal & use the stock for soup so would make a few meals instead of just one meal if I buy the slices...
    If you do buy a joint, can I ask where from?? How much does it cost?? How long does it take to cook?? Could it be pressure-cooked??
    Sorry for all the questions :o but I've never cooked a gammon joint before.

    Btw, I had 4 piggies in blankets for brekkie as hubby & DD2 decided they wanted some as well :rolleyes: Really enjoyed them & might make more tomorrow, makes a nice change from having cheese & mushroom omelette every day :D

    Anyone seen alias?? Hope you doing ok, missus, wherever you are.

    Instead of cutting out the wine completely, could you have one wine-free day a week & see how that works?? I think you hit the nail on the head when you said it was a habit, very easy to get into, not so easy to break :rolleyes:

    Yes, buy either a gammon or bacon joint raw, then I boil it in water with a couple of bay leaves and black peppercorns. How long depends on the weight but all the instructions are on the label. You can then slice it as thick/thin as you want. I find it more economical.

    Some people boil it in coke http://www.channel4.com/food/recipes/chefs/nigella-lawson/ham-in-coca-cola-recipe_p_1.html but I don't want the extra sugar.

    You can get smoked or unsmoked joints, your choice. Haven't got a pressure cooker so don't know if it can be used but I can't see any reason why not. A joint can also be roasted if you prefer.

    I know you're right Sweets. I had Monday off last week but this week it's been every night. I'll commit to a booze free Monday next week.

    I have a butternut squash ready to roast & make into soup tomorrow. I'll try putting cauli in it as you suggest. I'd never have thought of that. I've also got beef bones from the butcher ready to roast & make into stock.

    Tonight's dinner is shepherds pie made with cauli mash.

    Hi everyone. 4lbs Dobie - thats fantastic! I have only lost about 2 lbs but I am heavily into Asda's salad's at the moment. I wish I could make them like that. The carrots and beetroot are in long skinny sticks and they taste so nice. I try to chop everything up in small pieces but it doesn't taste the same. I've stocked up on the lc crispbreads, only 6 packets left in H&B so I bought them all and I also got the last jar of Flaxseed oil. They had plenty of the capsules on offer at £4.99 (down from £11.75 I think) but I prefer the oil. I have a bottles of Port and Pimms that I got for Xmas but I daren't drink them until I have lost loads more weight. Shame!

    Had to laugh when I looked at the link for the boil in coke gammon & saw that it's a Nigella recipe, she's definitely a no-holds barred, full-sugar, full-fat kinda cook!! :rotfl: Was surprised to see that it suggested keeping the liquid (ie. the coke!!) to make stock, bleurgh!!
    I've gone through that MSE link & that's a great help, I think I might actually use my slow-cooker (tis at least 2 years old & never been used :o) as that seems like the easiest way (for me) to cook it. Just have to buy a joint now.

    Dobie, don't forget you can put chopped leek in the BNS soup too. The more low-carb veg the merrier, as far as I'm concerned!! :D

    linni, I hope we don't shop at the same H&B, I already have nightmares about running out of those crispbreads & not being able to get any more!! :rotfl: I don't know what I'd do if I went to H&B & the shelf was bare!! Cry, probably :o
