    Just remembered another.
    When making Mazzers lasagne (the best thing ever along with the mexican fudge) I discovered I only had a nub of cheddar in the fridge.
    So I heated the double cream, added the nub (grated along with some finger) and then - with some trepidation - threw in some lumps of Lidl greek salad style cheese (knock off feta) which I wasn't at all convinced would melt into anything other than rather grainy ick. But it was great! So that's what I use every time now.
    Sorry no idea of quantities - I just fling rather randomly.

    I've got absolutely loads of saved recipes from an old low-carb newsgroup I subscribed to. However I've not tried them so am loath to flood the place with potentially horrid (or overly carby) recipes without someone having a go.
    So if any of you have a hankering for anything in particular I'll search and see if I can find a substitute. Or if the real experimenters out there who would like the whole lot I can zip them up and email.
    To whet you're appetite I'm really fancying this - as pre low carb I made chocolate chilli ice cream and it was wonderful, and I used to love the chilli chocolate bars from some expensive chocolate shop I've forgotten the name of. Never tried it so don't blame me if its disgusting!

    Chilli chocolate
    Melt together
    • unsweetened chocolate (the original said 2 squares of bakers so no idea how much that is)
    • 2tbsp butter
    stir in
    • sweetener (again the original said splenda but I'd use Erithrytol as I hate all other sweeteners) to taste and
    • 1/4 cup crushed chilli or 1tbsp pure chipotle sauce (to taste again)
    pour onto buttered plate to harden

    HanSpan, your recipes sound lovely, especially the focaccia :D, thanks for posting them & I'm sure Mercy will add them to her list.

    I don't have a microwave (still) so can't try the microwave sponge :( One of these days .... :rolleyes:

    Obviously haven't tried the microwave flax bread so can't help with that.
    Haven't tried the bakewell tart either but I know Badger did & think it worked out for her so hopefully she or Mercy will advise on that one.
    Never tried protein shakes & tbh, I think you've just put me off!! _pale_

    And the only thing I can think of for your mystery recipe is pancakes?? :confused:

    Ahem mazzers, no I must have missed that fresh start thing :o Or I've seen it so many times, my eyes must have temporarily glazed over!! :p:rotfl:
    Only kidding!! Really, really hope you manage to do it this time!! A stone is approx 2lbs a week leading to xmas so tis doable methinks. I'm going to try & fit in at least a half hour walk each day & I'm hoping that helps me. I'm also hoping that most of the 8lbs I put on last week (!!!!!!!!) will come off quickly, I've certainly been peeing a lot since I started lcing again yesterday!! :rotfl:

    Menu for today:

    B - 2 pork sausages & fried egg
    L - 2 crackers with butter & cheese, garlic sausage
    D - 2 fish in butter sauce with cauli mash

    Had my hazelnut hot choc with cream last night followed by a glass of wine & 2 more crackers & cheese, but the crackers were more to help with the, erm, toilet department iyswim!! :o

  • Hmmmmm, chilli chocolate, not sure about that one HanSpan!! :confused:
  • Melt knob of butter in frying pan with a splash of water (to stop the butter burning)
    Add chopped leeks & gently fry for a few minutes until softened (don't let the leeks go brown as that makes them taste bitter)
    Add either double cream or creme fraiche & warm through
    Add grated cheese (cheddar, blue cheese, smoked cheddar, any cheese you like really) & heat through until cheese melts
    Season with black pepper.
    That's it!!

    I'm with HanSpan on quantities, just fling in amounts randomly until you like the look of it, not too runny & not too thick!! :D
