Well done paula on the weight loss!! My muffin top hasn't quite re-appeared, even with the 8lbs on, but my bra feels tighter underneath

I've just had some stewed bramley apple & a natural yoghurt due to my feeling a bit peckish this afternoon, sticking to my menu apart from that though. Might have a hazelnut hot choc with cream for supper.0 -

I was doing really well back in March and was having lots of lovely grub it seems, so i am making a determined effort to get back to it and to have lots of lovely food prepared as i did before.

The cat has been in a strange sphinx like position in the kitchen, which is unusual as its a cold tiled floor, so i dont know if she's eaten it or scared it but i have been leaving titbits to see if its still here and they arent being eaten so
It may have died of dehydration, as what has it been drinking
Or, it has enough dried cat food that it previously nicked to last 6 months and is in hiding

Well, my trip up North was great, had a lovely time. Edinburgh was lovely, Got to see the Dr. Who exhibition in Glasgow, that was great.The Lakes was beautiful but very, very, very wet!! Drove straight home after brekkie yesterday because the rain was lashing down!! Drive home was a bit hair-raising due to flooding & gales!! :eek:
So glad you had fun! Weather just makes it more interesting! (from a person jus reading's perspective anyway)
Was lovely to see the Scottish side of the family, & MIL said I had lost weight (before the carb fest weight gain kicked in, obviously :rolleyes:)

Hi everyone, havent been on here for ages *slaps wrist* been really busy with work and studying neither going well
Havent been dieting one bit and have almost put on all the weight that i struggled to lose. keep trying to get back on plan but its a real struggle. Anyway hope you are all week and seems like theres drama on this thread :S not nice.
It's ok really, we just a bit shocked. Though for all the one's around long enuf to know who I mean - it's not really a shock, is it :rotfl: Par for the course, really :rotfl: Miserable person :rotfl:

It is pretty horrid that someone's deleted recipies but it has given me a kick up the b*m to post some of my favourites - many of them derivations or combinations of others, some I just can't remember where I found them! Apologies in advance for any repetitions or plagiarisms. Mercy please feel free to link to as many or as few as you see fit.0

In a large jug mix:
·[FONT="] [/FONT]2tbsp ground almonds
·[FONT="] [/FONT]2tbsp ground flax
·[FONT="] [/FONT]1tbsp Erythritol
·[FONT="] [/FONT]2 dashes baking powder (I have a funny mini spoon thing with dashes and pinches - it probably equates to a quarter of a tsp)
·[FONT="] [/FONT]2tbsp coca powder
add
·[FONT="] [/FONT]1whole egg
mix, then add
·[FONT="] [/FONT]2tbsp water
·[FONT="] [/FONT]1tbsp double cream
·[FONT="] [/FONT]2tbsp groundnut oil
mix thoroughly and let stand for a bit (for the flax to soak up some liquid)
if you have them add a handful of blueberries
microwave on 600 for about 2 and a half to 3 minutes. (take out, prod, put back in till it looks appealing)
Serve with lashings of extra thick double cream. I'm sure this should serve several and, if I'm feeling generous, I will share with the OH but I've often eaten the lot (and felt a bit ick afterwards!)
notes:
Adding blueberries makes it fab but be warned - the little suckers can be HOT.
I have mixed in raspberries too which were OK but nowhere near as good as blueberries.
This comes out quite gooey, almost blamangy in places, and cooked like solid sort of sponge elsewhere which is how I like it. More baking powder makes it less solid - more sponge cake like. More almond makes it more solid - I like the nutty texture of the flax mixed in. My microwave is a 900 and I found on full it cooked too fast and some bits got very hard whilst others were uncooked
I tried with part coconut flour and IMO it was disgusting, similarly with peanut or cashew butter mixed in (ewwww).
[FONT="]I made a four times the size version when we visited relatives and it took ages to cook but I think was even better as it had more gooey patches, although I did have to fiddle a bit and stir and serve up some cooked bits early. (I now travel with Erythritol and ground flax when we visit friends and force this on them!)[/FONT]0 -
Turn on your oven! About 180c
Mix- 500ml ground flax
- 1tbsp baking powder
- 1tsp salt
- 5 whole eggs
- 125ml water
- 85ml light olive oil (or whatever you have)
leave for flax to soak up some liquid for a bit then pour/squish into a rough oblong on a baking paper lined tray. You're aiming for about 10" by 8" (or more if you want it thinner)
sprinkle on some dried herbs
cook for about 20mins till it springs back a bit.

I've not tried this yet - a friend says its fab but we have different tastes and I suspect I'll want to substitute some almond for some of the flax and maybe reduce the egg a bit - that's always been my experience with flax cake/bread type things in the past.
I wonder if I have enough eggs to give it a go today. I've been put off as I bought an energy monitor and now am horrified at experimenting in the oven - have you ANY idea how much electricity a fan oven uses? Maybe I can do small experimental batches if I can find a selection of trays. hmmmm.0 -
Having posted a few I realise most of the rest I have are already up there in some form. So I've sifted through my printed off notes and am hoping for some help with my less than successful trials:
Microwave flax bread.
I've tried all manner of combinations with flax/almond, more or less egg/butter and more or less baking powder and seem to end up with either - weird, holey, unappealing omelette with flax, or savory cake. As I said in my previous post I'm loath to experiment too much in the oven (and I'm lazy and impatient) so has anyone had any success with something bread like in the microwave?
Bakewell Tart
I followed the recipe on the links page but it turned out undercooked and rather flat. Mercy your notes say you forgot to reduce the temp but I can't see in the instructions where to reduce (mind you if I did it would probably be even more underdone unless its meant to start higher?)
any help greatly appreciated as OH LOVES bakewell tart and this might keep him off the sugary stuff.
Protein shakes
Ewww. Is it just me? I've again tried various combinations and they all made me gag.
My latest was 3tbsp Protein Isolate, 3tbsp double cream, 10ml choc Davinci, 5ml cocoa and 200ml milk. God it was disgusting and at that point I just gave up. Anybody got something that's actually nice and not reminiscent of babay sick?
Mystery:
I've found a post-it note with the following;
1/3 cup almonds ground
1tbsp butter
17.5oz pack cream cheese
1 egg
5 floz tub sour cream
1tbsp sweetener
makes 9 servings.
But no title or cooking instructions. What on earth is it? It was stuck to a recipe for baked eggs so clearly nothing to do with that. If I had the ingredients I could mix them and see what the consistency was but I'd still have no idea what to do with it!0
