Going vegan......old style?!

  • Have just finished the indexing and noticed that a few recipes I thought I had posted here aren't there at all - must have imagined it! I shall remedy this now:

    Butterbean soup
    This was originally posted by fedupandskint on weezl74's 50p a day part 2 but is so creamily good that I must re-post it.

    250g dried butter beans
    125g pearl barley (give or take this amount depending how much you have I used 90g) [i used pot barley]
    2 parsnips
    3 carrots
    1 onion
    parsley (if you have it in the fridge, garden or want to buy it)
    bayleaf (again if you have one fresh or dried)
    500g potatoes
    2-2.5L vegetable stock (either HM or bouillon)
    1tbsp caster sugar

    Soak the beans and barley overnight. After this remove the butterbean from the outer skins.
    Chop all the vegetables and parsley finely. Put everything in a large pan. Bring to the boil and reduce heat and simmer for 2hrs. Stir every now or then if it looks like it's sticking
    It can get a bit thick so you might need to add more water/stock to thin out slightly.
    Season to taste.


    Mushroom and Ale Pie (serves 4-6)
    My OH's mum made this for me when I first went there after going vegan. I was totally impressed and have made it myself a bunch of times since then.

    1 onion, finely chopped
    2 cloves garlic, chopped,
    1 lb leeks, sliced
    1 lb mushrooms, chopped
    1/2 bottle ale (or more)
    soy sauce
    1 tsp yeast extract
    1 oz flour
    1/2 tblsp sugar
    1/4 lb peas
    salt and pepper
    pastry for pie top (either homemade or jus-rol)

    Preheat oven to Gas 7. Saute onions til soft. Add garlic and leeks, cook til softened.
    Add mushrooms, dash of soy sauce, sugar & yeast extract.
    When juices start to run, add the flour to make a roux then slowly stir in the ale - you may need a little more to make enough sauce.
    Bring to a boil, add the peas then simmer for 4 minutes adding more ale/water if necessary.
    Pour into a pie dish, top with pastry and cook til top is nice and golden.


    Banana and walnut cake
    My favouite cake on earth!

    2 tblsp flax seeds, ground
    3 bananas, mashed
    300g self-raising flour
    150g margarine
    150g brown sugar
    80g chopped walnuts
    2 tsp lemon juice
    2 tsp oil
    1/2 tsp baking powder

    Preheat the oven to Gas 4/180C. Grease a large cake tin (I've used a loaf tin or a round one and either works well).
    Place the ground flax seeds in a small bowl. Add 6 tblsp water, mix well then set aside til the mixture is all gelatinous.
    In a large mixing bowl cream the marg and sugar.
    Stir in the mashed bananas and walnuts.
    Pour in the flax seed goo and stir well.
    Mix in the flour then lastly stir in the lemon juice, oil and baking powder.
    Pour into a tin and bake for about 45 minutes until golden and cooked through.

    Kim-ley Im so sorry that your ill and hope you manage to find a way to cope with whatever it is in time. The nectarine and Marzipan slice sounds yummy, I cant wait to try it and the sandwih filling is just what I need, Im always trying to think of something different to put in a sandwich instead of peanut butter or marmite.

    Just been catching up on the thread, managed to get the remnants of dairy out of my diet (I was having organic milk till I see on tv they keep the cows in cages as well, never liked eggs really, and cheese was out for cholesterol ), but then I read a few posts back lots of vegans don't have soy milk? I have been enjoying the alpro yoghurt, milk and the choc milk, got used to it really.

    Twinkle this might be one to add to your recipe's I can't remember who posted it originally...sorry. They are lovely.
    Almond slices
    Ingredients
    200g margarine
    400g white self raising flour
    50g ground almonds
    2tsp almond essence
    200ml soya milk
    50g sugar (if desired)
    raspberry jam
    flaked almonds

    Melt the margarine in the microwave and add to the sugar and mix well. Then add the flour, ground almonds and almond essence. Mix with your hands until it is the consistancy of fine breadcrumbs. Then add the soya milk and stir throughly.

    Spread the mixture out onto a greased baking tray and place in a preheated oven (gas mark 7) for 15 minutes (the mixture will just be starting to change colour).
    Take out of the oven and spread throughly with raspberry jam. Then top with the flaked almonds. Put back into the oven for 5 minutes until the almonds start to brown.
    Cut into thin slices and serve.

    I have been trying to find an alternative to cheese dip, I used to have an addiction to the nachos, jalapenos with cheese dips that you get at the cinema and I have been having a real craving for it recently, have found this recipe on the vegan lunch box website but I haven't tried it yet as I don't have the nutrional yeast flakes but it looks really good, if anyone makes it or has made it, please tell me how it turns out, I really want to make it NOW!!!

    Nacho Cheese Dip
    makes about 2 cups

    2 cups water
    ¼ cup raw cashews
    One 4 oz. jar pimentos, drained
    1 cup nutritional yeast flakes
    2 tablespoons cornstarch
    1 tablespoon fresh lemon juice
    1 ½ teaspoons salt, or to taste
    ½ teaspoon onion powder
    ¼ teaspoon garlic powder
    ½ teaspoon cumin, heaping

    Combine all ingredients in a blender and blend until completely smooth. Transfer mixture to a medium saucepan and whisk constantly over medium heat until thickened, about 5 to 6 minutes.

    Serve as a dip with tortilla chips and vegetables.

    Dr D I think most of us on here use one of the alternative milk products.
    Also when I went to the Vegan fair in Brighton they had a stall with alternative milk products , I dont think it was alpro but it was something like that, it was really popular. I use Oatly instead of soy milk as I like the taste better on my porridge or museli, but I have the alpro soya yogurts and desserts, so I wouldnt worry about that. You can get a lot of your vitimins from these substitute products.

    Hey guys,

    Just a quick one, i figured you'd be the guys to ask.

    My son has just gone veggy (though not vegan) and i'm looking for quick and easy type stuff, you know for those "i can't be bothered days" i figure there is most likely a cheaper/nicer/healthier way to go than the veggy sausages etc asda/tesco's/etc stock.

    Any idea's?? burgers/sausages anything like that i don't mind making things in advance so freezable stuff is fine.. im specifically looking for stuff to replace the whole sausage and chips type meals.

    Did a bit of a google about soy, it does seem a waste of time changing to soy products if I am just contributing to deforestation and the inevitable cost to wildlife.

    The more you look, the more complicated it gets :(

    Right I see your point, sorry I didnt think of that although I have read something about it before, I will have to find it again, I have a terrible memory but Im sure it said that most of the soya being grown in the world is for beef cattle food and not the higher quality stuff we use. If there was a lesser need for beef cattle then there would be a less need for deforestation. I will see if I can find the article and get back to you.

    Taye we have an index of recipes on page one of this thread, thanks to the lovely Twinklestar as well as that there are lots of good veggie/vegan websites on the net where I get a lot of my recipes. Try
    www.viva.org.uk www.vegsoc.org most of the ones I go on are vegan.
    A cheap book that I used a lot when I was veggie with mainly recipes for 1-2 people but you can adapt the amounts is 'No meat for me please' by Jan Arkless. Also Asda do some ready mixes for veggie sausages, burgers and nut roast for only 79p, the nut roast is lovely and vegan, they are handy to keep in for days when you cant be bothered to do much. Good luck.
