I've just been looking at my ecological footprint (see link in this thread http://forums.moneysavingexpert.com/showthread.html?p=18802187#post18802187) and the figures for the footprint for vegans compared with other diets are pretty amazing! Even better if you buy your food from farm shops & markets!
... and if you eat organic/grow your own... even better!
Good to hear this. I've just been planting my first seeds of the year (herbs and salad leaves for indoors).
On a separate topic I've been playing with tofu! I've previously used silken tofu for making quiche and adding to smoothies but I hadn't yet tried the firmer style tofu.
Well, I got some from the shops and was determined to give it a go. I decided on a completely basic baked tofu slice with vegetables for the first attempt. My trusty cookbook said it needed to be pressed before use to give it a better texture so I removed it from its little plastic packet and drained away the water (its kept moist like mozzerella). I then wrapped it in a very clean teatowel and put it on a plate with a big bag of flour balanced on top to squeeze out some of the moisture. This was left for about an hour.
After the hour was up I sliced the tofu, which was pleasingly firm, and dipped the slice in wholemeal flour to cover them. I then stuck these on a greased oven tray and baked them for about 30 minutes (flipping at least once).
I had these baked slices with roasted sweet potato, peppers, carrots & garlicy kale with tahini dressing. They were a good texture but even plainer than I had been expecting. I think next time I will add some paprika and cayenne to the flour or maybe marinate the slices in something exciting. The garlicy kale and tahini dressing was yummy and I'll post it later if anyone wants the recipe.
I only used about half of the little packet (I bought of box which contained two packets of approx 250g each so I froze one) so I wrapped the other half in clingfilm and stuck it in the fridge.
Today I used the second half to make Tofu Scramble from Vegan with a Vengeance. I had this on toast bor brunch with a big cup of tea. Despite the spices this isn't spicy tasting, just delciously savoury but i think it would also be delicious with a big pinch of cayenne added if you like a spicy mexican style brunch.:D
Serves 2
olive oil
1 small onion (chopped into small pieces)
1 fat clove garlic (diced)
75g mushrooms (thinly sliced)
225g tofu (drained)
2 tbsp nutritional yeast
1 1/2 tbsp lemon juice
1 small carrot grated (optional)
Spice blend
1 tsp ground cumin
1/2 tsp dried thyme
1/2 tsp paprika
big pinch tumeric
1/2 tsp salt
Fry the onion in olive oil until softened. Add the the mushrooms and garlic and saute for about 5 minutes.
Add the spice blend and stir well. Add a little water to deglaze the pan if needed.
Crumble in the tofu and mix well. Don't mash it into tiny pieces but make sure it looks nicely crumbled and chunky (like scrambled egg:rolleyes:).
Let it fry for about 10-15 minutes stirring occassionaly and adding splashes of water to stop from sticking too much and to keep the tofu from going too dry.
Add the lemon juice and yeast and mix well adding more water if necessary. Grate the carrot in if wanted (its mostly fro colour).
Serve and enjoy.0 -

Just been to Sainsburys and had a look to see if any of there hot cross buns were vegan and yes, two of them are and clearly labeled on the front too. I didn't buy any to try mind as i knew i was making a bread pudding for today and tomorrow. Only looked so I could post on here. So glad they have changed there recipe, last year they were glazed with shellac, so not vegan.
Hope this help someone. Will have to have a go at baking some one day.
Good luck in your blog if you decide to do one. I was thinking about doing one also, along the line of what vegans eat and posting recipe i try everyweek. At the moment though we are using things up ready to move, so won't be trying as many new recipes. So may have a go later in the year. Although there is a lot of vegan blogs, not so many English ones.

Tahini dressing
olive oil
2 cloves garlic (chopped)
4 tbsp tahini
1 tsp balsamic vinegar
big pinch salt
juice of 1/2 lemon
pepper
1/2 tsp paprika
4 tbsp cold water
Fry the garlic in the olive oil but only very very gently as you really don't want to brown it just gently soften it.
Put the fried garlic and all the other ingredients (except parsely) into a small food processor. Blitz until smooth.
Taste for season and adjust as necessary (I added more lemon juice as I like it quite sharp).
Leave to chill for at least 1/2 hour.
Add extra water if too thick after chilling.
Serve over green veg (kale, cabbage, broccoli, etc).
Makes quite a bit!0 -

Well I managed to stay off the thread for a whole day, but I started getting the sweats :eek:
twinkle_star - how soft/hard were the tofu bakes? Am on soft food at the moment after jaw op, so can't have anything which requires either effort or bite (though I found biscuits amazingly melt in my mouth). A few weeks ago I did stir fry with tofu, I just treated the tofu like would have the meat, plus tahini. It wasn't the greatest effort as I really should have done more prep with the tofu, but it was edible and if I do it again properly, will post it on here...
Speaking of tofu, at Mr.S yesterday:

Following on from hot cross buns Mr. T donoughts are vegan.
Reading through some other's experiences of veganism, I feel very, very lucky. My family have completely supported me although the fact I'm nearly 30, haven't lived at home for five years, and they haven't yet needed to cater for my needs probably accounts for something. However, they haven't bought me animal-related goods for years (leather, suede) and they have not been negative at all, possibly because they are animal lovers and do see sense in a vegan lifestyle, but are not choosing it themselves.
My OH wants me to eat fish, and because I had to put on weight before my op, he wasn't aware of the 'junk' I was able to eat (crisps, cakes, buscuits, chocolate, the unmatchable Swedish Glace etc.) and couldn't understand why I'd made the decision when I did. I also have the issue that I can't stop suddenly using animal products; I think I eventually will, but also as the chief dinner maker I need to respect that he's entitled to dietary choices like I am. My Vegan Friend does this for her partner, but doesn't handly any meat, she uses utensils instead. OH gets frustrated that he can't pop into a shop and get me a treat, but I said he'll eventually get used to it and I can train him up!
As for my circle of friends, we've grown older with a vegan friend so all that
has changed is that there's two of us in the group.
At work, my colleague is vegetarian and was vegan through her pregnancy, so she lent me Skinny B*itch and Vegan in a Non-Vegan world and she often makes vegan goodies. In our building, we have one vegetarian, but otherwise everyone has raised eyebrows if I've mentioned it to them. The first thing I get is 'won't you miss bacon?' (as a meat eater, I very rarely ate it) I ask them how often they eat bacon, and they shrug and say 'well, I'd like the option to have it'. I feel like saying 'I'm sure the animal would like the option of staying alive' but I hold my tongue!0 -

Even my kids partners are getting in on the act with the lectures, as well as my Mum and friends :rolleyes: Luckily I dont take any notice of them, I've been a veggie for years and being a vegan is something I've wanted to do for a long time, it was this thread that encouraged me to give it a go, originally for a couple of weeks but now Im going to stick with it.

I've been lurking this thread since the begining and thought I'd finally speak up! I'm (currently) a meat eater but over the last few years have become more and more veggie, mainly due to trying to lose weight and save money! Somewhere along the line the guilt of eating animals seems to have kicked in!
I've recently suffered some really nasty recurring bouts of "poorly tummy" after eating junk and I've had enough of it! The last couple of times have been quite debilitating and it's finally made me want to seriously do something about it. After following this thread and reading a lot of stuff on websites I've decided to give veganism a go.
Have to say I'm actually quite nervous about starting this but I'm determined to give it ago! I'm treating this initially as a 30 day challange starting from feb 20th.
As this is a total "ban" on all meat, dairy etc does that mean I'm going cold turkey or cold tofu:rotfl: ?!?
Anyway, wish me luck!
