SS, I'm sure your daughter will be fine. I've worried about mine every time they've gone away (I still do, and they're 18 now
) but they've always come back full of the wonderful time they've had.
Stacey, Diet Coke is definitely not good - as everyone has said, it's a filthy cocktail of revolting chemicals. However, I've never managed to give it up completely (I have a couple of - caffeine-free - cans in the evening) and it doesn't seem to have impeded my weight loss. Everyone's different, of course, and it could be that your body doesn't cope well with the artificial sweeteners.

Yesterday's menu for me:
B: none
L: sausages, mushrooms and fried eggaubergine Parmigiana, green beans, espresso-sized cup of LC hot choc
The aubergine Parmigiana was from Rose Elliot, and it was absolutely delicious! It's the same dish I have when my girls drag meto Pizza Express (melanzane Parmigiana) and it compared very well. Cheap too - tinned tomatoes, an aubergine, clove of garlic, bit of Cheddar, bag of cheapo grated mozzarella.
I won't force another recipe on you, but do let me know if you're interested as I'd be happy to post it.
I also made chocolate cake from the same cookbook - not for me (I'm not keen on chocolate cake) but as a 'treat' for diabetic OH. However, it was utterly utterly foul. Even the dogs weren't keen.Ground almonds are fair enough as quiche crust, but in anything else they're horrible. :eek: Shame we don't like them, as I was hoping to use them to make pancakes later this month.

All these girls going off on jollys! My daughter is off to her first brownie pack holiday. Shes 7 and has never slept away from home and this is for 4 days!!

Aubergine Parmigiana
Serves 2
1 medium aubergine
2 tbs olive oil
250g tinned tomatoes
1 garlic clove
s&p
200g mozzarella, finely sliced (don't use good stuff - I used Sainsbury's Basics ready grated)
a few fresh basil leaves
85g grated Cheddar or Parmesan
1. Preheat oven to 200/400/Gas 6
2. Cut aubergine thinly lengthways - try to get nine slices. Brush with oil, grill till golden and tender
3. Puree tomatoes, add crushed garlic and s&p (I also added a scant tsp Splenda because tinned toms can be a bit bitter)
4. Brush a shallow gratin dish with remaining oil. Put three pieces of aubergine in the base. Spread with a third of tomato mixture, basil leaves and half the mozzarella
5. Repeat layers. Top with the grated Cheddar or Parmesan (I also added some more basil on the top)
6. Bake for 20-30 mins till golden-brown and bubbling
I made it in two separate gratin dishes and it only took 20 mins.
NB. It says not for induction, as I guess aubergine and all that tomato is a touch carby.0 -

My youngest went camping with guides last year & she came back stinking!! My other daughter didn't want to sit next to her in the car!!:rotfl: Of course I had the lovely job of defumigating her & all her clothes!!0 -
HC, that recipes sounds lovely but can I ask a silly question?! Do I need to peel the aubergine? I've never cooked with it before.0

more than happy to keep this up as they will always be useful to dip into.

Badger, I so wish I liked almond flour. I guess I could try soya flour, although I assume it's higher in carbs. I have to have pancakes somehow!0 -
I thought this blog by Eades very interesting I think this is why it's so important to get the message across to others so that we change the climate of public opinion.
