ISOM, i've never heard of spanacopita, it sounded like an unpleasant symptom to me :rotfl:(Perhaps if we pick the wrong thing today, we'll have a nasty attack of spanacopita?)

Thankfuly the sun is shining! I'm just up and having a cuppa before a hive of activityCat litter trays to empty, washing to hang and clothes to be put on plus a mum to arrive! Guaranteed the moment I step in the shower lol!!

we came, we saw, we foraged (veni vidi foragi???)
A very amused man and his concerned and troubled friend at ISOM's old allotments steered us towards the knotweed. One laughingly said he'd look on the news to see if I'd died (!) and the other urged me to burn any leftover bits....
Now the man on ceridwen's ace link, seems to have been harvesting giant knotweed which is about an inch in girth for the young tender roots, therefore his suggestion to peel them made some sense.
Ours was a max of 4mm thick and mostly one or 2 mm thick, I honestly couldn't face peeling: there'd be nowt left. They are washed and chopped and merrily boiling away, and do smell rather like rhubarb. I shall probably blitz with sugar and then strain it to remove woody bits.
Will let you know how we get on.
N.B if this is my last post, suggest not eating knotweed!

oh no...shes not been back...now I know she was still alive at about 6 and have seen said knotweed bubbling on a weezl stove and it does smell of rhubarb but (if I may say?!!) looks like....boiling sticks! umm...hope its yummy weezl - post back to say you are still in the land of the living!
Just make spanacopita with my very own made up recipe (pinched a bit from a few recipes and cobbled)! Mum says its one of the nicest things shes eaten...aww bless! Will post piccie if & when I have energy...its all run out now! Basically you get a tin of spinach (I got one of the big ones from Indian shop for 79p), a small tub of plain cottage cheese, 1/2 tsp nutmeg, a block of feta cheese and a pack of filo pastry and approx 2 oz butter...
Drain spinach and put in pan (wok in my case) and bubble as much water off as you can. While thats doing chop the feta into cubes & drai water off cottage cheese if there is any. Then add feta & cottages cheese to spinach & mix in and add nutmeg. The simmer gently to get all water out. While thats simmering paint butter er the bottom of a square low lipped tin (or other shape but low lip is imp!) and then place filo on a damp tea towel, brush top one with melted butter on the sheet and place into the tin, buttering & layering until the base is covered. I did bits outside too and then folded them over when I then put the spinach mix in and then put a few sheets on top...you must butter each sheet & work quite quickly as it dries out. Then bake for 40 mins on medium (will check & edit later - I think I did 280) ad then cut into squares and eat! Can be eaten hot or cold! I had mine with chopped beetroot & cottage cheese! nom nom as weezl would say and added bonus is its quite healthy and despite looking fiddly only takes 1/2 hr to makeNerd no 109 Long haulers supporters DFW #1!
