Pork steaks / cubes need using up

I just got a big pack of gorgeous pork loin steaks for a very good price at Costco today. Has anyone got any recipe ideas as I will be eating them for quite some time to come!!!

Thank you

Now come on CQ if I did that I would be breaking the habit of a life time!!!!:D
  • Just looked in my recipe file but not much has really jumped out at me as we don't tend to eat very much pork.

Found this for the slowcooker which someone must have posted at some point (sorry not sure who deserves the credit for it :o )

    Pork Steaks

    mushrooms
    pork steak
red and green peppers cut into strips
    red wine
    paprika
    worcester sauce
    tin chopped tomatoes

Just throw it all in.....ready when you are!

And another one ... (again taken from a website somewhere that I once tried, so not my recipe)

Pork with sweet potato rosti and spiced apple puree

    Ingredients

    For the rösti
½ sweet potato, peeled and grated
    ½ apple, peeled and grated
    pinch of salt
    pinch of cayenne pepper
    1 egg white

    For the spiced apple purée
    ½ apple, peeled and grated
    splash of white wine
    knob of butter
    pinch of chilli flakes

    For the pork
    drizzle of olive oil
    1 pork fillet

    Method
    1. Preheat the oven to 220C/425F/Gas 7.
    2. For the pork, heat the oil in a non-stick ovenproof frying pan until hot.
    3. Trim the pork fillet and sear in the pan for a few minutes to brown. Transfer to the oven and roast for 10-12 minutes, or until the pork is cooked through.
    4. For the rösti, mix the potato, apple, salt, pepper and egg white together in a bowl.
    5. Place the potato in the centre of a clean tea towel and squeeze out the excess moisture.
    6. Heat a pan drizzled with oil until hot. Place a chefs' ring in the pan and spoon in the potato mixture, pressing down using a spoon. Remove the chefs' ring and fry for a few minutes on each side, then transfer rösti to the oven for 6-8 minutes, to finish cooking.
    7. For the purée, heat the apple, wine, butter and chilli flakes gently in a pan for 8-10 minutes.
    8. Transfer the mixture to a food processor and blend until smooth.
    9. To serve, transfer the rösti to a serving plate. Slice the pork fillet on the diagonal and arrange on top of the rösti.
    10. Pour the spiced apple puree over to finish.

Hope that helps a bit :)

  • Bit of a 'posh' recipe this but nice for a special occasion.

1 pork steak per serving, sliced into strips
as much garlic as you like
    finely chopped onion
    sliced button mushrooms
    double cream
    brandy
ready made wholegrain mustard to taste

saute the onion & garlic, then add the pork and saute until pork is almost cooked.
Flambe with the brandy & reduce sauce by half.
Add double cream until you have enough sauce, scraping the bottom of the pan to make sure you get all the flavour into the sauce. Add whole grain mustard to your taste. ( you can leave this out if prefered.

cook for a couple of minute for the sauce to thicken slightly, and serve with either rice and veg, of buttered new potatoes and veg.

The quantities are a bit loose, as I'm a chuck it in and see merchant, but it makes a rich sauce, which tastes as though you've been cooking for ever.

You can also follow the above sauce recipe, replacing the pork with any sort of steak, (frying steak is good too) adding either peppercorns, or more mushrooms.
  • Coat each loin steak with stuffing, line them up in a row, like a joint. Add some onions whole and any other veg you want to use up on your roast-peppers are nice-you could also stuff these. Not sure what temp but Im guessing about gas mark 5.

  • That recipe sounds lovely foreverskint, and has been ferreted away into my recipe files to try out at some point! :D

It's very similar to something I do with rump steak occasionally, but I pan-fry the steaks first for 5-6 mins, then remove them to "rest", before going on to sautee onions, garlic, mushrooms, peppercorns/mustard and de-glaze with red wine rather than brandy, before adding a splash of cream! ;)

  • Try coating in english mustard then tossing in brown sugar and grilling
or, chopping into cubes and shallow frying and in a saucepan making a sweet and sour sauce with equal measure of tomato puree, sugar, vinegar, soy sauce, flour and then orange juice and water until you get the right consistency.
