    I have come up with an idea I am going to try. My nana used to make these ginger biscuits which were absolutely gorgeous especially if we went round to see her after she'd made a batch and had them whilst they were still warm. I thought that instead of adding in the ginger I would substitute it for chocolate chips instead. As they contain golden syrup hopefully they will still have the flavour that I would have gotten had I made cookies with soft brown sugar.

  • You can put choc chips in banana bread it is very nice. Or here is my recipie for cookies highly reccommended by my kids. No brown sugar either.
    400g soft butter (or marg)
    150g caster sugar
    tin of condensed milk
    500g pl flour
    2 tspns baking powder
    2 packs of choc chps

    cream butter and sugar, stir in condensed milk
    fold in flour, and baking powder
    stir in choc chips
    roll into balls
    gas 4 about 15 mins, light golden

    Makes nice chewy cookies.
    I divide the mixture in 3. Roll 2 portions into long sausage shapes and freeze. Then when defrosted just cut into slices and bake.
    Makes about 35 all told.

    I have heard of people blitzing demerara with a hand blender to get it 'finer'. Don't know if it works or not but might be worth a try?

    1. Shake a few chocolate chips into the palm of your hand.

    2. Chuck into mouth immediately to avoid melting. THese do melt in your hand as well as in your mouth.

    3. Repeat until chips are used up, or you have had enough, whichever happens first.

    The only shop round here that sells choc chips is expensive does anyone use hard chocolate either grated or chopped how to you do that and how much ta in advance.

    hi jinny,
    I never use proper choc chips, I always just buy bar chocolate & chop it to the size I want, it doesn't seem to matter if the bits aren't all the same, when you get a big one it's a really nice surprise :D

    you do need a good strong knife though, & have the chocolate warmish/at room temperature for easier cutting

    My mom used to make really nice choc chip cookies but unfortunately I don't have the recipe - every version I try involves rolling the mixture into balls, my moms used to be 'dripped' onto the tray off a spoon so it was a much 'runnier' batter, and mine never taste as good!:confused:

    Does anyone have any successful recipes that might be what I am looking for?

    Please.....I am desperate to make a good choc chip cookie - not to hard, quite chewy in the middle....no nuts just plain choc chips!

    hi ... what about this one? its not runny, but you just drop spoonfuls on a tray!

    100g butter
    100g caster sugar
    1 egg
    1/2 tsp vanilla ess
    175g plain flour
    100g choc chips

    beat butter and sugar till creamy, add egg and vanilla, add flour and choc chips. mix till all combined.

    drop heaped teaspoonfuls on baking tray, flatten slightly with a wetted fork.

    bake 10-15 mins, 180/350/4. till golden around edges. makes 12-15ish!

    i find that the less well cooked they are, the chewier they are!

    rather yummy and easy to do!
