I was going to make some chocolate chip cookies and have just looked for a recipe on the BBC website and all the recipes say one of the ingredients I need to use is soft brown sugar. I don't have any. We have some demarara sugar. Can I use this instead or can I make it without brown sugar altogether. Otherwise can anyone suggest anything I can make to use up some chocolate chips but not muffins as I have just made a batch.

You can use demerara sugar, but it will give you a more open and less chewy texture. However perfectly edible!0

You could use granulated or caster sugar if you have it. That will make a less crunchy texture, but won'r give such a good flavour.
I'll add this to the choc chip cookie thread later.
