Heck no you've hardly started! Two and a half hours... it depends on your cooker but it needs at LEAST four hours (and more like SIX) and will still be good at about eight or even ten.

I started a beef one at much the same time as yours; it's already smelling nice (as in "I'm SO HUNGry"... ) but I shan't be dishing up until six / six thirty and maybe not until even later.

Remember to not take the lid off to check! For most cookers it takes them at least twenty minutes to make up for the heat lost even for a moment. So if you've lifted the lid already please add twenty minutes per time to the rough timings given above.

Which should still give you a good safe couple of hours either side :)

Is this where I'm supposed to say...

"Come up and see me sometime... when I've got nothing on but a lamb stew."

    ?

    :)

Best of luck :) Anyway a maxim to remember and one I haven't mentioned lately...

No recipe is carved in stone.

Yes, it took me ages to realize that - I used to be a stickler for exact quantities and all the ingredients - now I realize that was daft (although obviously some ingredients are essential) and it's good fun to experiment and improvize (while using some common sense of course!)

Did anyone see that guy on Hells Kitchen USA who cooked a steak with peaches for Gordon Ramsay!! What on earth made him think that would be a winning combination!? :)
