    I try to match it with whatever I'm serving it with. For example with lamb I'll make it with lamb stock and add mint sauce.

    The only thing that stops you is your imagination, add anything you like depending on what you are serving it with. You can add hot, cold, nuts, seeds, cheese, flavourings, vegetables etc.

    If I am doing a seasoned meat. fish etc. I will just add butter to the couscous otherwise the choices are endless.

    Try this (meant for Bulgur Wheat but works with Couscous).

    BULGUR WHEAT
    110gms (cooked) Bulgur Wheat (A bit wet following pack instruction, would use less water or cook like rice in microwave cooker)

    1/2 yellow pepper chopped (or your choice of colour)

    2-3 Spring Onions chopped

    Small tin of chickpeas (I would actually use a large tin)

    Peppered Mackerel,Tuna etc (Your Choice)

    Mix ingredients together, toss in the fish

    Allow the dish to chill for several hours.

    (The bulgur wheat should be dry not wet, like couscous, if not dry, put the bulgur wheat in a metal sieve, put a little water in the bottom of the pan, place sieve over the top & heat the water, the steam will dry & separate the wheat).

    This is a basic recipe, try adding flavoured oils, vinegars, mixed beans, left over cooked meat, cheese, fruit, nuts etc, whole baby tomatoes, almost anything goes.
    Everything has its beauty but not everyone sees it.

  • I like to add mixed spice, chilli flakes, pistachios, chopped dried aprocots and lemon juice. Also remember a little olive oil and some salt :)

    I'm afraid i'm a bit boring - I only ever serve cous cous with something in a sloppy sauce (chilli-bolognaisey-taginey type sauces) so that the cous cous just gets coated in the sauce. One day I might be adventurous enough to try it as a side in its own right!
  • I do mine with chopped apricots, or other dried fruit, and some toasted pine nuts, or flaked almonds .

    I often use it instead of rice with a sauce-y meal, especially on a weeknight as it's so quick to cook! It's also nice as the base for a salad with things like peppers, onions, tomatoes, cucumber etc and a basic dressing.

    We usually use couscous with chicken, and we add lemon juice and rind, and just a small amount of finely chopped fried onion. In summer, we add some chopped fresh coriander, too.
  • I soak mine in a little vegetable stock, then add olive oil, lemon juice, s&p, chopped fresh parsley & mint, skinned & seeded chopped tomato, finely sliced spring onion & sometimes I throw a few chick peas in. It's really lovely in the summer.....
