Reverbe - I researched this recently and in grams the ratio is 1 couscous to 1.25 water. Anywhere between 50 to 100 grams per person is a portion size depending on how hungry you are. I use my scales - weigh 100g couscous, add 125g boiling water, stir quickly then cover and leave for 5 minutes before fluffing up with a fork. im surprised people leave their couscous for so short a time, i use a lid and leave it for about 20-30 minutes. i add a stock cube to the water rather than the couscous as i find you get chunks of powdery stock cube if you dont mix it in the water first
i never stir the couscous until after i take the lid off0 -
Thanks sexymouse. I tried google but they were all US cup measurements..if its like rice then a cup is wayy too much.. I usually do a third to a half of rice but I do also have a tala measure for dry ingredients. It's the ratio to water I have trouble with
couscous keeps nice in the fridge though, i always cook up loads, usually 2 cups0 -

Conclusion: there are as many ways to cook couscous as there are individuals :rotfl: I am surprised people use so little water with their couscous - the ratio of 2:1 produces, for me, perfect couscous after only ten minutes - all the moisture is soaked up, and when fluffed up with a fork, all the grains are separate, with no excess moisture to be seen. Any less water, and it'd be, to me, like sand - completely inedible.
And if I left it for any longer than 10 minutes, it'd go cold, which is OK if used in a cold salad, but not for a hot meal.

WHO moved my thread?? Exciting things with couscous does NOT relate to my measurement issues? I am fed up of having my threads moved to irrelevant boards/threads etc.. I had one of my threads moved once to the family and relationship board and couldnt find it as I dont ever look on there not having either..it gets tiring having to search your own user name to find your own posts.What Would Bill Buchanan Do?0

I haven't read all this thread so someone may have mentioned this but personally I love the combination of chopped apricots and cubed feta cheese with cous cous - it's something I was served in Australia and loved so started making myself.0

We went to a New Year's party and someone had brought along some couscous.
This was very tasty but couldn't find who had made it. It had peppers in it and I think lemon does anyone know a nice recipe for couscous please.0 -
We use couscous in a salad type thing.
Make couscous according to pack instructions (enough for 2 people say).
Add 2 cloves garlic, 2tbsp. olive oil, half a large tin sweetcorn.
It's not got pepper and lemon, but tasty0
