    I have had a madhur jaffrey book for YEARS and it is great, I have learnt a lot from it.
    I would also recommend growing your own coriander, even if it is just in a pot on the windowsill.
    My DS (aged 8) made a beautiful dish of jumbo king prawns.
    i would hesitate to call it a curry, calling every Indian dish curry is like calling every English dish fish and chips.
    i ate loads of pakoras in India and they were often very basic, and for a light snack or light lunch in the heat, the batter made from chick pea flour, and inside were pieces of potato or other veg, or once paneer, and spices.

    Mishaps to avoid. Burning the onion. If that happens take out the burnt bits and transfer the good pieces to a clean pot.

    Too hot. No problem.If cooking with tomatoes just add more. The same goes for yogurt. If it is really hot prepare the basic curry I have already done ( of course without meat ) and add to the existing one.

    Bit lacking in flavor, fry up more spices and add.

    Too runny. We like ours to be thick, just cook on a high heat at the end of preparation to reduce.

    Next post will be one of my wifes favorite dishes. It is really easy to do. It`s an Indian stir fry!

    i always used chilli powder i have both mild and hot, i have never used dried.

    I use dried red chillies as they are so cheap. Believe it or not the ones I am using now are 8 years old and kept in an air tight container. The potency is about half of what it was when first purchased.

    OK as promised, a stir fry of sorts. This dish we have as a side dish to a main curry. I cook this in a wok.
    Tablespoonful of sunflower oil


    One onion, peeled and finely chopped

    3 crushed garlic cloves

    a piece of ginger

    teaspoon of corriander powder

    teaspoon of cumin

    a heaped teaspoonful of mustard seeds

    2 good sized potatoes

    half a cupful of frozen peas

    two teaspoonfuls of tomato paste (optional)

    Peal and half the potatoes and cook until almost boiled. Fry onions for about 7 minutes and set aside. Put the mustard seeds into the remainder of oil, adding a little if required. Place a lid on the wok as they will start to pop. After a minute or so add the garlic and ginger and fry for a minute over a lowish heat. Now add the spices and again fry for around a minute. Next take the boiled potatoes and dice into around 3 quarters of an inch cubes and put into the wok working them into the spice mix. Fry for a couple of minutes having added the tomato paste. Finally add the frozen peas are make sure they are warmed through. Serve.

    If you want you can use a frozen bag of mixed veggies instead of the peas. It is a very dry dish so it will compliment a ``wet`` curry dish.

    And I have only as much as I can eat (so just a biryani usually).

    In our local Asda they do a ready packed Indian feast for 4 for a tenner. It consists of 4 different chicken curries ranging from mild to hot, 4 portions of yellow rice, 4 plain naans and 4 onion bhajis. If you buy the same off the curry bar its about £15, but these are delivered to Asda already made up and therefore are cheaper. When I dish them out at home they make 6 plates, two of which go in the freezer and then when we've done that twice I just buy 4 extra naans and in effect we have a free meal.

    I'm not claiming they are as good or as wholesome as they HM ones on this thread, which I have printed out and will be trying over the weekend, but they are great for a quick, tasty and cheap meal. I often pick one up on my way home from work if I can't be bothered to cook.

    Pobby, can't wait for the korma recipe. Heading to Morrisons tomorrow for all my spices.
