I like beetroot with houmous and also on tuna mayo butties.
I can also vouch for the chocolate beetroot cake (although I will use less oil next time).
Oh, and the first time I ate lots of it, I was nearly down the Dr.s thinking I had a kidney infection0 -

Preparation
Beetroots can be boiled, steamed, roasted or cooked in a pressure cooker. The latter method is the quickest and easiest method. First of all, cut off the leaves approximately 5cm (2in) above the root but do not trim off the tapering root at this point. Wash carefully and avoid damaging the outer skin of the beetroot as it will bleed when cooking.
To boil: A medium sized beetroot will take about an hour to cook in boiling water. Allow 30 minutes for smaller ones. Leave to cool and slide off the skin.
To steam: 30 minutes - 1 hour depending on the size. Leave to cool and slide off the skin.
To pressure cook: Cover the beetroots generously with water but take care not to fill the pressure cooker more than three-quarters full. Bring the water up to the boil and cook on the highest pressure for 10 minutes. Allow to cool slightly, open cooker and slide off the skins of the beetroot.
To roast: Wrap beetroots in foil and bake at 150C for 45 minutes - 1 hour.My weight loss following Doktor Dahlqvist' Dietary Program

Beetroot would have to be the only vegetable I loathe. It makes me dry retch even putting it in my mouth. Everybody loves it in my house. Years ago I was given some so I cooked it up. DH hated it, liked the canned stuff better.:p So sorry can't help, I would go with Curry Queen's suggestion though and feed it to the cattle.Don't worry about the world coming to an end today. It's already tomorrow in Australia.0

Oh, I've peed red from eating a jar of beetroot before(do you notice how proud I am :rolleyes: )
Sometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...0 -
Roast the beetroot, just nice & slow like lovin life & debt free say - you'll know they are done when you squeeze them gently & there's a little bit of " give". Beautiful with roast meat or on their own hot with vinegarette. Very different flavour to the pickled
favours - tho' that can be hard to beat.
We've just discovered this year & they are super autumn food & if what they say is true about colourful food being full of antioxidants & vitamins - then they couldn't be better for you

One slight difference in the method I adopted was to put the beet and choc (in chunks) into the oil in the food processor and whizzed it. Got a lovely gloop to add to the dry ingredients
