Ahhhh now that recipe looks pretty close to what Lesley Waters made her flat breads from the other day, only she added some spices and chopped coriander to give extra flavour, and shaped them into little flat ovals (sort of like a paratha?) then rubbed some olive oil on them before cooking on a hot griddle. They looked so easy to make and would be perfect with a curry

My dad has a potato base that he made for pizza. I have made it too, will ring him tonight and get the recipe for you all and stick it on recipe thread0

I've done a tater base before now, just fry small diced pots in butter very gently, season well, put a layer of grated cheese over it still simmering in the frying pan (this binds it all together) and quickly add your pre-prepared toppings to sink into the cheese. irish potato cakes
1lb mashed potatoes cold
4oz plain flour
2oz melted butter
pinch odf salt & pepper
combine above ingredients to form a workable dough
roll out onto a lighly flour dusted work top, into a round. Cut into triangles and fry in bacon fat. yummy
If you wanted this for a pizza base i would roll it into a circle and fry both sides before topping and finishing under the grill, or in the oven if you place it onto a baking sheet.0 -
Not so relevant for the OP, but you can make really delicious pizza by speading all the pizza toppings on to french baguettes sliced lengthways - these are a real favourite!! It's an excellent way to use up stale baguettes (or a good use for baguettes which are reduced to 10p or less at the end of the day in supermarkets
)

You can make excellent pizza with just flour, salt and water - but you need what is called a starter which takes about a week to get going and uses the natural yeasts in the flour. Any good book on bread baking will tell you how to make one. It's the same way sourdough breads are made. The recipe I use for pizza is 4 1/2 oz of starter, 18 oz bread flour, 2 tsps salt, 2 tblespns honey, about 3 tblspns olive oil and approx 8 fluid oz water. Mix dough, cover and let rise for about 3 to four hours, then divide into four balls. You can keep overnight in the fridge for an ever better taste. Makes four pizzas. Once the starter is going, you can keep it for years in the fridge just by refreshing with flour and water once or twice a week. Makes even better bread.0
