Half term baking - healthy ?

Hi - with the kids being off they are constantly hungry and I was wanting to do some baking so there is stuff for them to eat but hoping for some healthy ideas ?
We have oats so anything oaty ish would work ? Anything with chocolate (cocoa powder or hard choc) will please my eldest.
We also have Cheerios and I am sure you can make some kind of cereal ar out of them.
Also dd is not a breakfast fan has anyone got any breakfast type muffin recipes I could bake and freeze and then get out every morning for them ?

There will be loads more knowledgeable people coming along to give you more ideas but for my part - my DS doesnt like most breakfast stuff so have been cooking him blueberry muffins.
As regards the oats - flapjacks seem ideal.
I would have a look in the indexed collections as there is loads of inspiration there.0 -

Here is a great Susan Reimer recipe for breakfast muffins
8oz (225g) plain flour
1 tsp (5ml) bicarb of soda
1/2 tsp (2.5ml) salt
1 medium egg
4-6oz (110-170g) soft brown sugar
1-2 tbsp (15-30ml) black treacle or molasses or honey
2 1/2 oz (75g) natural wheat bran or 3 1/2 oz (105g) oat bran
8 floz (240ml) cultured buttermilk
3 tbsp (45ml) water
3 floz (90ml) vegetable oil or 3oz (85g) butter melted
3oz (85g) raisins, sultanas or chopped dates
1) Put cases in muffin tins or grease muffin pans. Preheat oven to 375-400 F (190-200 C) for conventional oven, gas 5-6.
2) In large bowl sift flour, bicarb and salt.
3) In medium bowl beat egg with fork, stir in sugar, treacle/molasses/honey, bran, buttermilk, water and oil/butter.
4) Pour all wet mix onto dry. Stir until just combined, adding dried fruit during the final strokes. Batter will be lumpy but no dry flour should be visible. I use a metal dessert spoon to mix with and stir for no more than 30 seconds as overstirring makes them tough and small.
5) Spoon into tins. Bake for 20-25 mins until tops spring back when pressed gently.
This will make between 11 and 12 muffins. The way Susan Reimer writes her recipes, she accounts for peoples ovens having hot and cols spots and that some people don't like things as sweet so where it says "4-6oz sugar" just add what you think will suit you, I usually go somewhere in the middle, same with baking times and temps.0 -

twinks are definitely the first thing that spring to my mind when looking to make healthy-ish snacks, if the OP's still looking for ideas.....or weetabix cake....or flapjacks....mmm think i'm gonna have to have a baking morning soon0 -
