What's this... a competition?
1.2 kilos is my guess.
Use it all, you can always add more sugar or honey if it's not sweet enough.
Chop rhubarb into 1 inch bits, put in a pan with a small amount of water (only covering the bottom of the pan), lid on, boil, stir every few mins, don't let it dry out, when rhubarb has turned mostly mushy, add plums and syrup to taste. Then do the biz with the crumble bit.

I can't see why you couldn't freeze the left over crumble.
But a better idea might be to freeze the excess stewed fruit first? So next time you fancy crumble you just defrost it, bung some more crumble mix on top and put it in the oven. You could even try making cobbler if you were feeling brave.
Also, you could have the stewed fruit with plain yog for brekki, or over muesli to help it taste less like sawdust

That's actually what I meant. The fruit.

Yup, don't see any reason why you couldn't freeze the stewed fruit. I often do this with apples and brambles in the autumn, for crumbles through the winter.
I'm actually surprised you managed to freeze the rhubarb raw last time, i'd've thought it would've collapsed on you? We live and learn!

Errr...not value muesli. Alpen. And not the reduced sugar version either.
I managed to freeze the rhubarb fine last time. It was, however, mush when it defrosted.I did seek advice on here first!
