    Thanks everyone!
    I'm inspired now to make a couple of different soups I think... I never thought about how easy it is to whip up some soup from leftover veg - I think soup will make a big comeback in our house...

    Great suggestions for freezing containers too... old margarine containers would be perfect!

    EDIT: Made the soup and it was delicious!! I left out the mushrooms in the end... (is there is a good way to use them up?) and blended half and left half chunky... reminded me of posh Covent Garden soups - just as good and better for being home made - thanks everyone!

    i just throw the contents of my veg drawer in a pan chopped up and top it up with water and add a veg stock cube or 2 boil it till the veggies are cooked then blitz it with the blender then add salt and loads of pepper to taste and if im feeling adventurous maybe a dash of chilli powder or curry powder. any veg will do, its normally the bendy unappetising leftovers that get turned to soup in this house. last week i made a stilton and broccoli soup and it really was delish...some old cubed stilton a sad looking broccoli some veg stock blitz when cooked then add a dash or 2 of cream yummmm, i`ve even made soup out of carrot peelings before boiled then with coriander blitzed through it.
    proper prior planning prevents !!!!!! poor performance! :p

    i often make 'end of the week soup' with left over veggies - always add a medium onion, marmite and often a bit of chilli powder and blitz with stck blender - this often comes out brown as red/orange and green veg used. other faves include carrot and red pepper soup - with or without lentils and onion, or carrot and parsnip soup both with chillie and onion - lovely orange colour- better than browm if you are having visitors...always make load cheaply and freeze in individual portions.

    If you soften your chopped veggies in a little oil before adding the stock / water it makes for a richer tasting soup. Also consider adding a tin of tomatoes to add extra flavour to 'leftovers' or 'fridge drawer' type veg soups ( a favourite in our house).

    I've always found that a bit of celery (if you have some) works wonders in a veg soup. Or season with celery salt.

  • one that i make is really easy- i dont use measurements, just chuck as much as i want in!

    tin or two of chopped toms
    carrots
    courgettes
    garlic
    onions
    salt n pepper

    you could add other veg if you wanted to

    chuck it all in and cook on a low heat till veg soft.
    if you like chunky soup only blend half, if you like it smooth blend the whole lot

    i normally make a big batch and have it for lunch every day for a week!
