This is my version...
Any left over veg
Cook in a little bit of butter
Add a couple of spoons of flour to the veg, so all the flour is stuck to the veg
Then add water - the flour will thicken the soup
Add herbs, salt and pepper.....or a chicken stock cube to veg soup is fab.
Once cooked blitz to how you like your soup.I also remember the words of my friends, but I would rather have enemies than friends like youwould like to make it known that ZubeZubes avvy is a DHN, she's not dancing

I usually use butternut squash, red or brown onion, carrots, parsnips, swede, garlic but after christmas I had a red cabbage left over and put that in and completely ruined my soup, it was awful and purple! Ive been known to add sprouts to my soup, if I have some knocking about. I chop it all up throw it in a pan, add stock (usually Vecon, but bovril will do) and simmer for 20 mins, then blitz on my Kenwood. I put it in a large sandwich box in the fridge and that is my lunch through the week.0

i really fancy making my own veg soup with a load of veggies i've got left over in my fridge, but i'm put off because the last time i tried to make it, it was really bland
what spices do you all put in your veg soups so they don't taste like ....well, like dish water?i don't like curry, thats the only spice i wouldn't use, but i never know whether to use parsley, mixed herbs or whatever.

Depends on the type of soup you are making but rosemary goes nicely in potato soup,
Curry goes nicely with parsnip (although I did read you don't like curry)
A good stock/bouillon should make a vegetable soup not taste bland.
Parsley, mixed herbs are both good in soup
I think nutmeg in parsnip worked too....
My general advice would be to try it and see how it goes!!

ground coriander everytime. i love it. cumin is nice if it's a very carrotty soup i think. mixed herbs is good in leek and potato.0

I know they aren't spices, but I find a bit of (low-salt) soy sauce and/or a teaspoon of marmite does a wonderful job!
Also, I use the Marigold stock powder which gives a really good flavour as a base.0 -
I dont usually put herbs or spices in my veg soup but i do use 2 knorr stock cubes and i can make a pan of fab soup outta anything. I would use corriander for carrot & corriander and curry powder for the curried parsnip but stick to the stock cubes for the veg or chicken soup.
Made vegetable and green lentil soup yesterday and it was delish.
I just bunged in what was lurking in the bottom of the fridge;
2 large carrots
4 medium sized potatoes
1 leek
1 onion
some diced swede
leftover bit of a tin of sweetcorn
small handfull of green lentils
2 chicken stock cubes
salt & pepper
cover with boiling water and simmer until veg soft, i like to blitz it with my hand blender.
Voila! It was really tasty and used up all the stray veg.

I normally just use mixed herbs for an 'ordinary' veg soup, but if I fancy something a bit spicy then I'll stick anything in lol - cajun spice is lovely, especially with carrots, sweet potatoes, squash, peppers etc, and I love the taste of smoked paprika so I tend to add a fair bit of that too.0

oh thanks everyone...i'm gonna try it with some mixed herbs first, taste it, then maybe add some rosemary if its still not very tasty
