Vegetable Soup recipe anyone?

    Hi, can anyone give me a really easy recipe for vegetable soup as I have never made any soup before so it really needs to be a failsafe recipe. Also, I have peeled all the veg I am going to use for my soup and was wondering whether I could use the peelings for veg stock/

  • Our favourite soup is always -
    Splash of olive oil. Brown an onion in it.
    Add a chopped carrot. Brown a little.
    Add 1/4 cabbage, cut very finely.
    Immediately pour in a tin of tomatoes and herbs
    Add about a pint of water and 1 teaspoon of salt or use stock
    When the veggies are nearly soft, throw in a handful of macaroni
    5 mins before you need the soup, add a tin of baked beans.

    This recipe was from the lady who catered for the Harry Potter films. It's very versatile, so if you haven't got the right veggies, just experiment.

    oooohh that sounds nice. Might be one for another day though as I havent got half of those things in. I have just gone through the fridge and wanted to do a veggie soup with all the bits i have got.

    I just chuck all me veg in the pot with a tin of choppd toms and some stock made with veggie stock cubes, cook until soft then blitz with the stick blender, if you want it thick take some stock out when you blend it - you can always add it back in if its too thick. I season with salt, peper and mixed herbs.
    Its great to experiment. If I use butternut squash I use stock made with chicken Bovril and its yummy!

    I buy the stew packs of veg (from waitrose or tesco). They usually have an onion, a couple of carrots, a turnip or swede and a leek. I chop them all up small in the food processor, sweat in a little butter for about 15 mins, then add 1 litre of veg stock (made with the Marigold bouillion powder), season and cook for around 30 mins ( or more if I forget :wink:) It's delicious, healthy and cheap!

    Forgot to say that i blend it with a stick blender, or stick it back in the food processor for a couple of mins as i like a smooth soup.

    Just made a big pot of soup - a bit of oil, lentils, carrots - I dont peel, onions, reduced bit of turnip, couple of tins tomatoes plus 2 wrinkly ones from fridge, stock cubes, water from kettle, all boiled up then blitzed with hand blender, then added tins of red kidney beans. Yummy, very filling, nutritious and loads left, kids have just had 2 bowls each:D

    Patchwork: I take it the tin of beans will be the 'half size' rather than the 400g tins? It sounds fantastic and I think I'll make it tomorrow!

    Weemissy: Do you use tins of lentils or dried ones which you have pre-soaked?

    I got my first breadmaker today and my first loaf is in the production right now. I really fancy having some nice soups ao accompany the bread. Mmmm.

    squee - I use dried red lentils, I just rinse them and bung in pot, no soaking.

    Thanks Weemissy - I'll give that a go. I thought they had to be soaked overnight or something daft and it put me off!
