not bad see below how it turned out!
the cheese on top added flavour.tomato sauce from beans thickened nicely, couple of potato slices were still slightly hard, but maybe i cut them too thick or didnt cook long enough. couple of questions:
- onions - after removing the skin and slicing, do you also remove the centre bits?
- do you let oven baked meals cool before eating? sometimes i find eating a meal later on more tasty, its like the heat of a meal can get in the way of the taste???0 -

I always use the centre bits of the onions (and cauliflower leaves..brocolli stalk..and the green bits of spring onions).
And I agree about letting food cool. Especially Italian sauces. My fella made a spag bol last night and we used the remainder of the sauce today to make a lasagne, it tasted 10x better!DFW Nerd 1050 (09/08 overdraft £1200)

I have been putting some recipes on my thread can anyone feed large family for under £50.
I make most of mine up as i go along, with whatever ingredients i have to hand. I love coming up with new recipes. If im stuck there are some fantastic ones on this board! Love the suggestions others have given!It's the start of the no takeaway challenge.0 -
I'll do the same, any I try and like I'll post, I am looking through several veggie books. Right now I dont have quite as much time as i'd like for cooking but in a few weeks time I should have more!
Talking about cooking, how did everybody get a grounding in the subject? I lack confidence, which I think is because I was never really taught the basics. It seems there are so many different ways to cook things, and so many different combinations of ingredients.
I suppose my main concerns are for it to be cheap, veggie, and to taste good. Anyway nice to meet other veggies on here ! Hope we can make friends and keep posting each other tips and recipes0 -
That makes two of us - ie the "I was never really taught the basics" - me neither. I've basically taught myself by trial and error - courtesy of student vegetarian cookbooks - as they tend to be simple. Also a bit of experimentation of my own.

I did a little bit of cooking at school but I have mostly learnt by watching UKTV food and other cooking programs for techinques. A lot of recipe ideas from here as well.0

The best vegetarian cookbook I have seen is "The Really Useful Vegetarian Student Cookbook" by Silvana Franco. I may come back and post some fave recipes from there a bit later if I can dig it out.

-This is my absolute favourite cookbook as well; I've had a copy of it for more than 10 years, and still cook from it regularly, The recipes are foolproof and come out looking and tasting great!
Having been a veggie for almost twenty years, I think the best tip I can give is really flavour the food. Meat eaters tend to rely on the meat to give flavour, and for me most meat eaters can't really cook decent veggie food as they don't understand about flavouring dishes up. I tend to use quite a lot of herbs, garlic, spices, onions, marmite, soy sauce etc. to provide extra flavour. We recently had a friend staying with us, someone who used to actively avoid eating vegetables of any description; the greatest complement she paid me was clearing every plate of food I put in front of her, and declaring 'I didn't know vegetables could taste so good'!
Incidentally, Vegetarians don't eat any meat OR fish, Pescatarians don't eat meat but do eat fish...
