Right. Have done the following;
taken skin off 4 chicken thighs (£1.48)
and browned in pan with an onion (7p)
Added 2 cloves garlic (and 2p)
dash of wine (leftover and a definate extra so not counting in cost!)
a mild chillli (20p)
and a tin of chopped tomatoes (13p)
simmered and smells yummy.
total cost: £1.90 it is to feed two, but there looks enough for more than that - we have big portions in our house though!:rotfl:
serve with either rice, pasta or baked potatoes and green veg. (I reckon that the potato option with some peas will cost me another 40p- stupidly bought expensive baking potatoes as thats all there was left!! )
as i was feeling inspired i also decided to make a fruit crumble.
flour (I use value so about 3p?)
sugar (again didn't use much - 3p?)
butter (10p)
2 plums - 30p
1 tin peach halves - 38p
2 apples - 30p
so i make that a total of £1.24 But i have made enough to feed at least four big portions with that as i got rather carried away! Lets hope it all passes OH's taste test!:p
so my grand total for the meal plus leftovers (OH is away tomorrow night so the leftovers should feed me) = £3.54
Is that a reasonable spend??????????????????r.mac, you are so wise and wonderful, that post was lovely and so insightful!0 -
r.mac,
That sounds delicious! If it is enough to make two evening meals for both of you, you could always freeze half for another night, making it even cheaper.

My favourite way to cook chicken thighs is to pierce the skins, then mix up ketchup, mustard, soy sauce, a dash of worcestershire sauce and a pinch of sugar (don't worry about amounts, you just want a nice tangy sauce) - marinade the thighs overnight in the fridge and then just stick them under the grill. Great with rice, any sort of potatoes or salad.0

I love chicken thighs, my favourite way to cook them is as follows
buy them on the bone as it's usually cheaper
bone them and stuff them with a homemade stuffing, you can use a cocktail stick to hold them together
brown them in a little oil then remove them from the pan
fry some chopped onions
add some other veg, e.g. peas, sweetcorn, chopped peppers etc.
add a few herbs
add some stock or water to make a sauce, maybe add a little wine
put the chicken back in and simmer until cooked.
I usually serve them with riceIt's my problem, it's my problem
If I feel the need to hide
And it's my problem if I have no friends
And feel I want to die0 -
Just to report back - OH and I ate the whole thing and polished off all teh pudding as well
It was really yummy and i would recommend the recipes to anyone!
thanks for all your ideas - going to try out doing a 'mini' roast with them on sundayr.mac, you are so wise and wonderful, that post was lovely and so insightful!0 -
Yes,I often roast thighs or drumsticks . Just bung 'em in a roasting tray with a bit of oil and i often put baby poatoes(no need to parboil or peel it), chunks of carrot and parsnip. Let them all do together, make a bit of gravy, dinner is done.earn what you can, save what you can, give what you can :hello:0

Much nicer than breast fillets. Pretty much anything you use the fillets for, you can use the thighs - just a bit more fiddly cutting up the meat, but well worth it.0

I've got some chicken thighs to cook for tea. Can you cook them in the steamer and if so, how long do they need?0

bumped - because I would really like to know the answer too - for when I do have some chicken thighs to cook.0

Hi
you can cook them in the steamer, no problem. You can add som vegetables like carrot, celery and onion in the water or in the steamer basket for more flavour. For the cooking time I'm sorry but I don't know. Check from time to time with a fork, if the meat separates easily from the bones they are done.0
