Jamie's bang bang chicken is dead simple. Sprinkle with Chinese five spice on both sides, dry fry in non stick pan until cooked then add a tablespoon of sweet chilli dipping sauce just before the end and cook until caramelised. Add a tablespoon of sesame seeds before serving. Serve with stir fry veg. Really simple, quick and very tasty xGrocery challenge June 2016

I used meat from chicken thighs to make a chicken fajita stack. Sort of lasagne but with no pasta. Just cook chicken, onion and pepper in a spicy sauce and layer in a dish with flatbreads, top with cheese and bake. Lush.Bossymoo

Fry the meat from the thighs with some bacon and leeks then put them in a dish and pour over some thin cheese sauce. Top with thinly sliced potatoes and cook for around 45 minutes. You can top it with more cheese near the end of the cooking time.0

I dry fry mine till golden brown, remove from the pan, fry off some onion and chorizo, add some chopped peppers, throw in a cup of rice, add the chicken back in, cover with chicken stock and let it bubble away till the rice absorbs the stock. Dry fry (or in very little oil) thighs in a pan. Put in casserole dish, add a can of vegetable soup (you may want to dilute it a bit, depending on make), and any extra chopped veg you fancy. You can either include chopped potatoes in the mix, or serve with mash. Cook in oven until chicken and veg are completely cooked. You can also use mushroom soup, and serve with rice.0

Top up with stock if needed but best served as a thick sauce so needs to reduce. Add a few green olive to serve. We have it with rice or new pots.0

Chicken thighs are so tasty and juicy and don't dry out like chicken breasts do.
A really easy recipe is to chop loads of veg eg mushrooms, carrots, onions, potatoes (chop potatoes small so they cook properly) and add to a casserole/slow cooker with chicken thighs and with a tin of condensed soup like Campbell's mushroom soup or chicken soup. You could flash fry the chicken thighs first before adding them but not essential. I cook this covered in the oven for approx 1-1.5 hours and it is so tasty, I add a few herbs and black pepper. A nice lazy meal with minimal effort.
This would work with chopped tomatoes and maybe some stock and seasoning instead of the soup for an Italian style sauce.
I also simply roast chicken thighs with or without seasoning (Cajun mix from asda is a fave) in the oven or my actifry. Lovely and tasty and handy to keep in the fridge for snacks for hungry boys and girls.
This morning I bought tesco everyday value chicken thighs and drumsticks for £1.50 which was 2 big thighs and 2 big drumsticks, I know some people won't buy value meat/poultry but they are fine and the thigh I had with my lunch was nice and tasty.0 -
I make a yummy casserole with chicken thighs (once tried it with breasts but not half as tasty).
Fry thighs in ovenproof casserole until golden and then set them aside. Fry leeks (frozen from Farmfoods) and onion (ready softened in microwave). Add chicken stock and carrots and mushrooms. Put all in casserole dish with sprig of rosemary and some thyme (tsp of dried) and season. Cook in the oven for about and hour. 15 mins before end, stir in a paste of cornflour/water to thicken. Sometimes I add quartered new potatoes as well but otherwise have roasties or a jacket and if I'm really greedy broccoli or cabbage as a side.0 -

chuck it all in a casserole dish, cook for about an hour, thicken sauce with a roux or gravy granuals, serve with potatoes/dumplings and extra veg.
