if I am using them in a casserole/stew type thing, do I need to brown them first? and what do I do with the skin? and the bones?

Yes, brown them first - skin on. Bung them in as they are - it's easier to pick the skin and bones off when they're cooked.Warning ..... I'm a peri-menopausal axe-wielding maniac0

Ooh, I love casseroled chicken thighs! :drool:
It's entirely up to you whether you take the skin off before cooking them - if you do want to remove it, it should slip off very easily, with perhaps just a touch from a sharp knife around the edges. Leave the bones in as they will make the casserole taste better, and they're a flippin' nuisance to remove anyway in my experience! If you cook them long and slow, the meat will fall of the bones by the time the casserole's cooked.
And yes, I would brown them first, both to make the chicken look better and to add a bit of extra flavour.

right, looks like I will brown them and pick the skin/bones off after. I bought them because free range chicken thighs were on offer at the farm shop, and I thought they should add a lot of flavour

That's pretty similar, really - you just get more meat! The only difference is that it's harder to get the skin off raw legs than just the thighs, in my experience, so I'd definitely go with sorting it out after they're cooked.Back after a very long break!0

I've recently learnt to love chicken thighs. There are loads of great recipes for them on BBC good food. Last week I made the chilli chicken one pot and I can also highly recommend the rosemary chicken.0

I have some Cooked Chicken Thigh's that need using up, I was concidering making a basic cassarole as i have Leeks, Carrots and New Potatos.
But I always make that and im bored of it
So i thought i'd throw it out to all you clever lady's and Gents i have a reasonably well stocked cuboards with most of the basic's any idea's??
