    I found a nice way to do things with chicken thighs the other way, and I can't wait to try it. It was to take the bones out and fill them with herby sausagemeat, fix them shut with a toothpick and bake as normal. It sounds delicious. :D

    Ahh thankss Olliebreak I was just staring thoughtfully into my freezer thinking hmmm im gonna have to use them all now cos they have frozen in a lump - next time I'll try open freezing

    Think my OH will love your idea kitchenbunny, he hates bones so he would prefer that

    You just made me remember CCP my mums got a brilliant soup recipe - although my mother might feint to hear me asking for recipes !!

    thanks all , all the suggestions are brilliant for me - my OH is currently confused as to who stole his fiancee cos I dropped these suggestions in while trying to do my second ever meal plan lol

    I have to admit I bone out chicken thighs (spent a bit of time at catering college and boning chickens is the best thing I learnt ) I usually stuff them with something tasty and then tie up.

    I buy trays of 6-7 from nettos, about £1.70 and then turn into little roasts. I freeze them uncooked and they are handy for midweek meals when the imagination fails.

    JayJay - what kinds of things do you stuff them with? I'm going to try the idea I saw for using sausagemeat but beyond that my own imagination is failing a bit.

    Season the chicken thighs with salt and pepper and place in a roasting dish. Take a 2 lemons, cut in half and squeeze juice into a bowl. Place the squeezed lemons in between the thighs. Add 1-2 tablespoons of honey to the lemon juice, stir and pour over. Add a couple of sprigs of fresh rosemary to the dish. Cook for about an hour 180 degrees. Serve with rice and any veg you like. Pour the juice over the chicken when you serve it, it's really tasty and quite easy to make. You can also do this with drumsticks or wings.
  • Got 5 chicken thighs to do for 5 greedy people, plus basics. Any fab ideas?

    Foudn this recipe yesterday which i thought sounds pretty yummy - could convert to slow cooker if you like - and make your own tomato sauce?
