Thigh meat has the best flavour so I tend to shred the meat and add to some boiled rice with mushrooms,onions, sweetcorn, peppers and a little sweet chilli or sweet and sour sauce yumBlessed are the cracked for they are the ones that let in the light

I tend to take the bones out before cooking, stuff with cheese, mushrooms and anythnig else I fancy, roll them up and tie with string and roast, then serve with salad.
This may be a ridiculous question but where would I buy string from the kind you tie up meat with????Capital one was £1000.00 now £0.00:j

i dont usually do them in the oven. i cut them up with lots of bacon and onion. quick fry around in a large saucepan. add a little chicken stock, cube is fine, and cook a short while till done. because its all cut up it wont take long. add cream and dijon mustard to taste. yum. gorgeous with some crispy potatoes and veg.0

I cook a load up then shread the meat, cool and freeze. It is then there ready cooked when I want to add some to something i.e. curry, stir fry, rice etc. I just defrost in the microwave and chuck in shortly before the end of cooking.
Very handy to transform any number of dishes.
I also defrost and warm with some sauce and use in wraps - yummo!0 -
Greek Lemon Chicken (as told to me by an honest to goodness Greek)
Into a roasting pan put the chicken pieces, a bulb of garlic separated into cloves but not peeled, some peeled and quartered potatoes, a couple of lemons cut lengthways into quarters, a "slack handful of oregano"(I use a tablespoon or so of the dried stuff - she was using fresh from the garden) a good glug of olive oil and season with salt and pepper. Stuff everything into a medium hot oven until it's cooked. I usually give it about an hour, by which time the potatoes are nicely roasted and the chicken skin is crispy.
Sorry I can't be more specific, but she never wrote anything down.

has anyone else noticed how the price of chicken thighs and drumsticks has gone up?
I used to buy them - now its cheaper to buy the whole chicken! then i cook it - disassemble it and put it in freezer!
same with pork belly strips! cannot believe how expensive they are! I blame the celebrity chefs! spouting off on tv how great these cuts are! supermarkets have obviously noted that - and raised prices accordingly!
oh and for those who dont beleive me - I shop at Aldi and the price of of chicken thighs/drumsticks has gone up to £1.99 for six drumsticks the whole chicken can be had for £2.99!0 -
