    Serves 4 at approximately £1.40 per serving......

    8 chicken thighs (with skins)
    2 lemons
    2 cloves garlic
    1 tbsp clear honey
    large red chilli
    2 courgettes
    1 egg
    2 tsp olive oil

    1) Preheat oven to 200c, 400f, gas mark 6. Place chicken in a roasting tin
    2) Squeeze the lemons in a bowl, whilst reserving the skins. Crush the garlic and add with the honey. Chop and deseed the chilli - add. Mix together, pour over chicken add lemon skins, place in the oven and cook for 35-40 minutes, basting regularly, until golden and cooed.
    3) To make courgtte fritters, grate the gourgetttes and place in a bowl. Beat the egg, add to the courgettes, stir until coated Heat a little oil in a frying pan. Place spoonfuls of the mixture in heaps and fry until golden on both sides. Serve with the chicken.

    I buy them with bones and cook them in the slow cooker, pick the meat and skin and manky bits off the bones and then freeze in batches to use in curry, casseroles, etc

    I use them for Jimbalaya ... a recipe off Delia Smiths website ... can highly recommend.

  • I prefer chicken thighs to breast , they're more succulent and have more flavour IMO.They sell them boneless in Sainsbury's, Tescos and Asda, I just substitue them for chicken breast in any recipe (OH likes breastmeat though so I use a mixture of the two). My local butcher will bone thighs for me too. Looking forward to a chcken curry on Sat night so need to stock up on chicken this week.

    i have 8 skinless, boneless chicken thighs that must be eaten today and my mind has gone totally blank as to what to do with them :o

    i am trying to eat healthy so nothing with any (lovely) cream sauces and we seem to have lived on marinated chicken in wraps and pitas all summer.

    i have a good storecupboard and old potatoes and some asparagus that i could do with using. i also have frozen roasted mediteranien veg.

    there must be somthing really yummy i can make.

    Hi vixtress,

    A low fat way of eating them is to marinade them in the fridge with a little white wine, garlic, chilli and finely sliced onion. Then wrap the thighs and marinade in foil and cook in the oven. Serve with crunchy salad and a baked potato.

    Dice and baste with honey and mustard, thread onto skewers with pepper and red onion and cook! Kids love these with salad.

    Put a slice of mozzarella on each and wrap with bacon, bake and serve with bbq sauce and potato wedges and veg or salad - another of my kids' favourites!
