Hi Smashing Blouse,I fry mine with fry light and they turn out well.
I use leftover mash,tuna,sweetcorn or peas and pepper.I always use breadcrumbs I think they look nicer:D or it could be because I managed to buy a large packet reduced to 20p.:rotfl:0 -

Not sure wether you want to add breadcrumbs or not but I have made them using a cheese grater instead of a blender, worked fine for making breadcrumbs HTHLightbulb moment 15th Feb 2007:doh: Now Debt Free and plan on it staying that way!

don't need to fry them at all!
put the fishcakes on a baking sheet and pop in the oven for 35-40 mins until crispy brown... and fat free0 -
I make them with leftover mash potato... and its delicious with a bit of sweet potato thrown in!
I dip them in flour and chill them for an hour. Then I fry them on each side to brown nicely and finish them off in the oven. This way they cook through well and dont burn.0 -
I often make fishcakes, using up any bits and bobs of veg that I have left over.
I was going to attempt to replicate the M&S version from the advert, with the watercress sauce in the middle - I thought I could make the mix as usual and chill it, then make a thick sauce (watercress, parsley or whatever), spoon the sauce into the middle and mould the fishcake around it. Then I'd flour and breadcrucmb and cook as usual.
What so you think? Will it work?

I made corned beef cakes this week - mash, onion, corned beef. Dipped them into an egg whisked with a tablespoon of oil, then into breadcrumbs that I'd toasted in the oven for 5 mins. Baked them in the oven and they were lovely and crispy. I did shove them in the freezer for half an hour to firm them up though before cooking.
I can't be [STRIKE]@r$...[/STRIKE] bothered with the flour, egg 'n' breadcrumb thing, I'm too lazy. The last time I made fishcakes I just pressed the formed cakes into a bit of oatmeal, it was fine. evening everyone ....am gonna make jamie olivers fishcakes (cheaper than his) for dinner tomorrow will they be ok to freeze before cooking or after and if before should i do that after i've coated them in flour ?0

I freeze before cooking. Without knowing the recipe I can't advise on the flour question, sorry
