Tinned fish is fine, and you can add other things if you like. Current favourite is chopped parsley and a few chopped capers.

Hi guys, sorry if this sounds silly but I'm going to use up some stuff thats in the cupboards to make salmon fishcakes (ie mix with potato nd cover in breadcrumbs) but I've got a couple of questions. Would it be ok to freeze some of these once I've made them (only me in the house) and would it be best to fry them then freeze when cooled?
    Thanks x

I made a whole load for the first time a couple of weeks ago and froze some stright away. I did a bit of an experiment and found them best when grilled from frozen; I did try thawing them before I cooked them but they kinda fell apart. They did ok in the oven from frozen too.
    Hope that helps.

Freeze them before frying ;) When you come to use them, fry from frozen adjusting the heat so they cook gently through rather than burning on the outside.

An easy way would be to microwave jacket potatoes until they are almost but not quite cooked, then coarsley grate these and mix with the tuna. Add S&P and form into patties and fry in olive oil. Served with a salad and chilli dipping sauce. Mmmmmmmmmmmmmm tasty

LOL ! I bought them too, every time I open the cupboard, I see all those tins and think: what am I going to do with them all? All suggestions gratefully received.

I made fishcakes the other week (with white fish) boiled some white potatoes and one sweet potato, mixed it with some spring onions, seasoning, formed it into patties and fried, kids loved them, unfortunately, they hate tuna..
