This is a recipe Pam Ayres gave out on her Sunday teatime Radio 2 programme (on 28 June 1998, according to my note), but in ten years I've never got round to making it, despite good intentions. Elderflower Cordial
21 flowerheads
2 sliced lemons
2½oz citric acid
4lb granulated sugar
Put all ingredients in large bowl, pour on 2pts boiling water, stir to dissolve sugar
Leave for 5 days, stirring occasionally
Strain.
Dilute to taste.0
