This is a recipe Pam Ayres gave out on her Sunday teatime Radio 2 programme (on 28 June 1998, according to my note), but in ten years I've never got round to making it, despite good intentions. P'raps you can try it, Dustykitten, and let us know how you get on:

    Elderflower Cordial

    21 flowerheads
    2 sliced lemons
    2½oz citric acid
    4lb granulated sugar

Put all ingredients in large bowl, pour on 2pts boiling water, stir to dissolve sugar

Leave for 5 days, stirring occasionally

    Strain.

    Dilute to taste.
