    Could I just fry a couple of thin slices of apple for the scallops and balck pudding to sit on? Would they disintergrate.

    Now am I being thick or could I replace the water in that micro recipe with vinegar to make a chutney style or would that be nasty?

    a very quick simple chutney recipe
    chopped fruit and onion finely chopped
    fry in a little butter and oil til softened - add a bit of chopped garlic if you like and fry one min more.
    add a glass or two of white wine for pale fruits and red wine for red fruits. bring to boil.
    add a tablespoon of wine vinegar and salt and pepper, simmer a couple of mins til the sauce is reduced and sticky - taste and if too sharp add sugar if sweet add more vinegar.
    serve!

    The recipe contains apple's sugar and butter.
    I'm trying so hard to be thrifty, but it doesn't come naturally. You lot are an inspiration!

    In the fridge? A couple of weeks if it's cold enough.
