    French onion soup. Yummy. Just google.

    I echo the freezing. They can be a bit floppy when defrosted, but fine as an addition to dishes.

    Lotus flower baked onions are absolutely wonderful. Rather than me describe, there is a good video on Youtube.
    I've used other ingredients such as olive oil, lemon juice, yoghourt with some Indian spices.
    Olive oil, lemon juice with oregano, garlic and smoked paprika.

    Basically any kind of marinade that you fancy really. You can use white onions too.

    A really nice supper dish is to make a sort of onion tart tatin with onions, You need to Cook the onions rally long and slow with butter, an a pinch of sugar before adding the pastry ( a scone mixture also works well). Needs a green salad to give it freshness and left overs don't keep at all IMO.

    I cut off the top of onions, peel but leave the root end attached. Bake in the oven until nearly done, pull out all but a couple of outer layers. Chop the inner layers and mix with cheese; pile back in the shells and continue baking until all melty and yummy.

    That video is amazing. I've never seen anything like Lotus Flower Onions. Can't wait to try these.

    proper gravy... dice finely and fry onions over a low heat. add a spoon or two of sugar, stir and continue to cook low and slow until they begin to caramelise. Remove from the heat and add a spoon or two of plain flour, and stir until the onions are coated (the more flour you add, the thicker your gravy will be). Add a glug of ale or wine and return to the heat. Once the alcohol has evaporated, top up with a pint of stock. You may wish to use an oxo cube, gravy browning or a spoonful of marmite to give a rich, dark gravy colour.

    would be awesome on a roast dinner or with sausages and mash

    We use a fair bit of onions so I always grow too much, one way of using the excess is to make caramelized onion chutney.

    I am not sure if there much of a ££ saving here as you can get a gorgeous onion chutney in Aldi for less than a £1 but it is a good way of using the over production/purchases.

    I use them as a base for currys then make spiced onion with ketchup & mint sauce. Also good in pasta sauces, chilli, cheese & onion toasties, soups, loads.
