    I've been doing that very job this morning! I always freeze plenty of green chillies as curry/Mexican recipes often call for fresh ones, & they can easily be chopped from frozen. I have strung lots of red ones up to dry. When they are dry, I leave some of them whole & just store them in an airtight jar, and the rest, I whizz up in a food-pro to make into the dried chilli flakes. They last ages. This year, one of the varieties I grew was 'Pinocchio's nose'. These grow up to a foot long & so your eally get your money's worth when you freeze them, as you can cut each one into 3, which is about the length of a 'normal' chilli.

  • Another vote here for Nigella's Chilli Jam - it's fabulous. I made tons last year and included small jars of it in my Christmas hampers. x

    It'll only make a difference to the colour - I imagine the taste will be the same.
