    How funny OH just found a large bag of reduced green chillies today and decided to make an instant curry starter jar.He pulsed around 100g of green chillies with 2 whole heads of garlic and about 4 inches of ginger with a dash of water to let it down.He put this in a jar covered with a thin layer of oil and its maturing in the fridge ready to start off the next curry.OH word of warning dont taste to see if its hot!!!!!!

    Really like the idea of a curry starter jar, how long will it keep in the fridge, and how much do you use each time

    Is there a thread that tells me which chillies to buy,I always get confused when I see red, green, long ones, short ones, round ones etc

    If you google "BBC Good Food" and "Kerala Prawn Curry" you shoud get a recipe which uses 2 whole chillies per recipe (serving 2, so you could double it up). Wanted to make one yesterday but only had 1 chilli! Also, google "Delia Smith" and "Pasta Puttanesca" for a recipe that uses 1 chilli per recipe (serving 2, but really easy to double or triple up and finished sauce can be frozen.) Also, I always throw a chilli into my bolognese sauce. Also goes well in Pilau rice.

    Reduced chillies got cut up and with ginger and garlic gently simmered in olive oil for half and hour and then left overnight. Warmed up next day and strained into a bottle. Makes WONDERFUL bruscietta!!!! and FAB on pasta
  • I got a big brown bag full of chillis from the market man, and have no idea what to do with them...already have 12 chilli con carnes in the freezer, so making more would be daft...any dieas? was thinking Chilli Jam

    yeah chilli jam is lush but ive never made it only bought it .might have a search about as ive got a wee chilli plant with a few chillis on it in the garden
