Soft cheese (Philadelphia) is nice metled into pasta with perhaps some fried mushrooms & garlic and/or bacon.
Creme fraiche can be used to make a sauce too.Nevermind the dog, beware of the kids!0 -
About 12 years ago I was invited to a house party, it was a "bring some food" do. At the time I was living in a self-contained bedsit and I had a sink and baby belling but the closest I had to any kitchen work surface was the top of the old dodgy fridge - and that held the kettle and toaster.
So, I cooked some pasta and found this brilliant jar of sauce - and I've never seen it since. It was by Heinz and it was Honey, Orange and ... something. Just poured a bit of that straight out of the jar and onto the pasta. Job done - and everybody asked me for the recipe as it was so brill!
I think a lot of jars of pickles/etc would do as a pasta sauce. . . I wish Heinz still made that Honey/Orange one, maybe they do and I've just not seen it since.
Edit: I googled that, seems to be a "ORANGE & HONEY SALAD DRESSING" lurking about somewhere, still to track it down though .. on a mission now!
Edit2: Found a recipe for some that seems similar.
Combine zest and juice of 1 orange, ¼ cup honey, 1½ tbsp vegetable oil, 2 tbsp rice wine vinegar
or white wine vinegar and ½ tsp each salt and coarsely ground black pepper. Whisk together using
Stainless Whisk. Serve.0 -
I just stir a little butter through it, sometimes.0

I had some Italians to stay once and they made spaghetti pasta with just a chopped chilli and a bit of olive oil as the sauce - I thought it would be a bit bland but it was really nice.
Another good creamy sauce is mascarpone - you can do a mushroom pasta by frying mushrooms (I like oyster mushrooms but any will do) in a little butter with a bit of garlic then add some mascarpone (Sainsburys own brand one is good value) and lots of freshly ground black pepper + some salt. Add some fresh herbs too like chopped flat leaf parsley if you like.
Another good one is mascarpone with lemon juice and zest, salt, pepper and then add some cooked prawns just before serving (to heat through). I also usually add some rocket or pea shoots as well.
With mascarpone just put it on a really low heat and stir it for a minute or two until heated through. Creme Fraiche also works well.
If you like blue cheese then blue cheese (like St Agur) and brocolli is nice.
If you like anchovies then 'melt' some in a pan, add some dried chilli flakes and some lightly cooked broccoli florets or purple sprouting broccoli and coat the brocolli with the anchovy mixture and add to the pasta - delicious!
Ricotta with broad beans or peas and chopped fresh mint is nice too.
Ricotta with a mix of fresh chopped herbs is also nice.
Pesto or pesto and bacon (especially homemade pesto)

Hi there
Not sure if this has been said
1. Try creamy or cheesy sauce - think macaroni and cheese style, or mix some ham, mushrooms and cream for a type of carbonara sauce
2. Pesto - you can make your own - by pounding basil leaves, olive oil etc
3. olive oil style sauce - some authentic italian recipes - just have spaghetti with olive oil and cheese or other ingredients
4. Savoury mince - bolognaise style but without the tomato - make a beef gravy to go with the onions and mince and serve as for bolognaise.
Best Wishes
