    Hi there

    don't give up on your mini quiches - they can be made with a filling of cream cheese, eggs and smoked salmon with some dill or chives ( I looked a receipe for asparagus cream cheese quiche and that gave me the filling ingredients,just substituted with smoked salmon).

    Another smoked salmon canape is: mix dried or fresh dill with cream cheese and add chopped smoked salmon. Spread onto tortilla wraps, roll up, wrap in cling film and chill - unwrap and cut at a diagonal so they stand up on the plate (recipe on good food for this...just adapted slightly).

    Another idea is using little gem lettuce leaves as cups and fill with prawn cocktail - or make different with prawns, chopped tomatoes, chilli and coriander.

    Hello again,

    Yes you do need to fry them but I never use a DFF, If you have a wok or a wide saucepan you can use that should work fine, you'll need to fry in batches but they will still come out really nice. TBH I don't like the idea of the amount of oil needed in a DFF I'd rather fry in lots of batches esp if I am planning on serving them cold.

    I have also made the smoked salmon, dill and cream cheese pate. Made a bit of a boo boo though- I went to Mr M very quickly to buy everything I needed in a bit of a rush. Got home and realised I'd bought two packs of PINEAPPLE cream cheese :eek: What would one use pineapple cream cheese for?! So.... I used it in the pate as normal and put in extra lemon juice and pepper to counteract the sweetness. Had a little taste.... yum yum yum!!! Thank you for the idea far2182 :A

    I have also bought the bits to make a kind of topping (which I was going to use on poppadoms). I thought I wouldnt have enough time to make mini poppadoms as I wont be back from work till late tomorrow so I looked for them in Mr M. I found some but they were all smashed up so I bought some little brushetta slices to put the dip on. I have decided with the dip I will do a chicken tikka marinade on some chicken breasts and oven cook them, then shred them and mix with coriander, lime pickle and fresh chopped mango. I'll then top the brushettas last minute. I may have to add other bits as it's only an idea that I havent tested!! :rotfl:

    Not sure what else to do... maybe the smoked salmon mini quiches as suggested by misscousinit and the chicken satay as suggested by pink but not really sure yet, will see what I've got time for tomorrow!

    Hi all

    Doing canapes for DH's rather landmark birthday on Sunday (won't say his age but in 50 years he'll get a telegram from the Queen :rotfl::rotfl:)

    One thing I would like to make are goats cheese and onion chutney puff pastry bites and wondered the best way to do these? Should I cut small squares and put cheese and chutney on or do two big squares and cut them post cooking ? And do I part cook the pastry first then add the cheese and chutney (don't want the cheese to burn)

    I thought this was a brainwave in Tesco earlier and thought I'd find a recipe online but sadly not.

    hi Amanda :)

    I'd cut out small individual squares & place the filling on them, they'll look much neater than if you cut them after baking

    small thinly rolled ones won't take long to cook, 10 minutes maybe? so the filling shouldn't burn even if they're filled raw
    good idea to do a test run so you can taste the results in advance to make sure they'll be ok ;):D


    EDIT ... if you've time, prick the middle section of the little squares with a fork before adding the topping, it'll help to stop that bit rising too much
