    Is risotto easy to reheat? I imagine it easily goes dry

    I reheated mine in a plastic lidded container in the microwave. It wasn't dry at all.
  • Hello all :D

    I have my sister and her fiance coming over for dinner in my new flat on Friday :eek: my first time entertaining them!

    They are both pretty big eaters, so I planned lots of starchy grub:

    Five bean casoulet with focaccia
    ~~~~
    Risotto
    ~~~~
    Chocolate bread-and-butter pudding

    But I have no idea what to put in the risotto!

    Any ideas that will hold their own in a rather rich and flavoursome menu? I have a good amount of red wine to use up, I can eat lots of different ingredients - but I hate mushrooms!

  • Are you all vegetarian by any chance.

    Roasted onion and squash is nice. Flavour with sage and lots of parmesan.

    If you arent veggie, add some bacon.

  • Mushroom risotto is always 'substantial'

    If you rehydrate some dried mushrooms, you can use the liquor in your stock. I then use a Jamie Oliver tip and saute the musrooms with butter, parsley and chilli. sitir them in at the end adding lots of parmesan and butter.

    edit - this is no use whatsoever - just reread the 'I hate mushrooms' bit. :o angie skulks off hanging head .....
  • Hiya, i've posted a link for a red wine risotto - no mushrooms! I've made a similar one, from my student cookbook but i've lent it to my cousin socan't copy out that recipe. Its really nice, you can add some peppers or something to jazz it up maybe. When i made it i served with sausages :)

  • Here's my recipe for Pepper & sweetcorn risotto

    Truffle flavoured oil, peanut if no-one is allergic
    Paprika
    Turmeric
    Chilli Powder
    Saffron
    2 Veg Stock Cubes
    1 cup of boiling water
    Red Wine
    Rice
    3 Peppers different colours if possible
    Sweet Corn
    Onion


    I normally add prawns & spicy sausage to it when I make it for myself, but it works without.

    Chop the peppers & Onion, fry the onion in the oil with the spices, put the saffron into the water & leave it for as long as possible, put the pepper & sweetcorn into the pan & mix in with the onion & spices, add the saffron & water & pop the stock cubes in as well, add some of the wine & bring to the boil then add the rice & reduce heat to simmering point & stir until rice is puffed up & soft, add more stock or wine if needed.

    i made a really nice pumpkin and bacon risotto the other week. Only problem is it used white wine, rather than red. Recipe here. I used Aldi's bacon bits, 2 joined packs for 99p.

    yes - pumpkin risotto is one of my favourites too! if not using bacon, some blue cheese is very nice in it too. the other all-time favourite is parsnip risotto. lovely with plenty of parmesan, home-made chicken stock and a splash of white wine if you have it handy.

    LOL! My mum chased me around the house and pinned me down to get me to try mushroom soup... :rotfl:I was only 4, I thought it was hillarious.

    I love the squash suggestion! Do you think this would work? http://www.riverford.co.uk/recipes/recipe.php?recipeid=121&catid=3 I can imagine it being a lovely rich orange colour, mmm.

    I don't cook with meat much. The bean recipe is from Pret a Manger - if you go in on a Wednesday Saturday or Sunday they'll usually have it ... divine :drool: and very low in fat and calories :D
