  • Some weeks if my weight drops by 2kg I have to eat high calorie foods and need them quickly to hand as I need to snack 24/7 which is difficult when you dont feel like it....anyway...I found a quick snack which tastes lovely.

    Nachos with chilli & cheese

    I make a pan of chilli and put in a bowl in the fridge. I buy the cheap Tortilla crisps from Asda (19p a large bag) then scatter half a packet over an oven dish, spoon over some chilli (which is pretty dry and not too wet) then add grated cheddar over the top and put under grill for 5 mins.....delish!!....takes...well 5 mins as everything else is prepped!!:D

    Quick snack foods for me also are:

    Pitta bread and humous or cream cheese
    scrambled egg in the MW
    toast
    sarnie
    soup
    cold pizza (hm)
    rice pudding

    I'm pregnant too and i'm always forgetting to eat :o Before i got pregnant and also when i was pregnant with DD i had a huge appetite, people used to wonder where i put it all lol but now i can't manage big meals and tbh would live on salad, yoghurt and smoothies rather than anything cooked. I try to make sure i've got the following in the house for me to grab easily and i always carry a small snack in my bag to have on the go.

    * I have a box in the fridge which i keep filled with celery, carrot sticks, cucumber batons, slices of red/yellow pepper, babycorn etc which i pick at throughout the day, sometimes with a hoummus (sp?) dip.

    * I cut a block of cheese into matchbox sized portions and have one of these a day - OH keeps nicking them though :rolleyes:

    * Yoghurt, lots and lots of it, i'm obsessed lol

    * Cherry tomatoes

    * Washed grapes

    * Slices of wafer thing ham/chicken/beef

    * Rice cakes which i eat usually with low fat cream cheese, maybe cottage cheese, sliced tomato/cucumber and black pepper

    * Cereal bars, flapjacks

    * Small portions of HM soup that can be quickly defrosted and served in a cup

    Hi PG, my midwife has not mentioned nuts although I have read that if there is family history of nut allergy to avoid them like the plague, there are no allergies to nuts in my family but I don't eat them much anyway.

    angchris thanks for that, I feel very blonde now, I hadn't realised that was for tesco delivery codes!

    PP how on earth do you make scrambled egg in the microwave? I love scrambled egg but hate washing up a whole saucepan!

    lilmisskitkat, the box in the fridge sounds like a good idea, I love veggie stioks with dips, and wafer thin ham! My problem would be eating it all in one go!

    I use a pyrex jug. 2 eggs and some milk the same way as you would in a pan really. I then put in MW for 30 secs at a time and keep stirring till its done. Mine normally takes about 90secs which gives the toast time to pop up. No fate either and the jugs washes well;)

    Dead simple!!

    ooo thanks pp, i`d never of thought of doing scramblers in the micro, we love eating them but the eggs always weld themselves to my pans and i spend about an hour washing them up :rolleyes: will deffo give this ago...ang xx

    They actually come out softer than you get from the pan.

    Frubes yoghurts can be frozen and eaten straight from the freezer, so you donn't have to worry about eating them all before the use-by date. Or, you could nibble on handfuls of dried fruit?

    Might wanna check with your midwife on the nuts. One of the lasses in my office was gutted to find she's not allowed her daily snickers now she's pregnant...


    Why is this ? I was never told to avoid peanuts whilst pregnant :confused: I suppose it's my fault my daughter is allergic to them :rolleyes:

    I'm just going to do this for myself.

    FRENCH ANCHOVY TOAST

    Serves 2 as a starter or snack

    INGREDIENTS

    50g tin of anchovy fillets in olive oil*
    1 clove of garlic
    ½ a French loaf

    METHOD

    Turn the oven on to 220°C, 425°F, gas mark 7.

    Open the tin of anchovies and put both the fish and the olive oil into a bowl. Peel and crush** the garlic into the bowl. Mash up the anchovies and garlic.

    Cut 4 slices of French bread. Lightly toast them. Spread the fish paste on one side.

    Put them on a baking tray and cook in the oven for 5 minutes.

    ADDITIONS & ALTERNATIVES

    Add ¼ of a teaspoon of wine vinegar.

    * If you can only find anchovy fillets in some other liquid, drain it off and throw it away. Use 1 tablespoon of olive oil instead.

    ** The garlic really does need to be crushed rather than finely chopped.
